Lacia-Paige Cummings, a Canadian high school student and eco-advocate, designed a sustainable holiday menu that encourages kids to join the festivities in the kitchen while incorporating sustainable practices. Lacia’s holiday menu includes a kid-friendly appetizer, dessert, and breakfast recipe with inventive ways to repurpose leftovers from holiday parties.
As the winner of Tre Stelle’s Cheese4Change competition, Lacia appreciates the value of cooking sustainably. Cheese4Change rewards Canadian students with $500, and schools with $5,000 for their sustainable behaviour and recipes.

Wonton Napoleons with Herbed Tre Stelle Ricotta
19 wonton wrappers
3 tbsp unsalted butter, melted

2 tbsp basil pesto sauce

1 pound cake or any cake leftover from party
½ cup Tre Stelle Ricotta Cheese
2 tbsp demerara sugar

3 egg yolks
1 cup icing sugar, divided
2/3 cup whipping cream (35%)
1 (225 g tub) Tre Stelle Mascarpone
