Few ingredients work harder in the kitchen than rice. It can anchor a quick weeknight dinner, stretch leftovers into a completely new meal, or serve as the foundation for dishes inspired by cuisines from around the world. For recipes where rice is the star, quality matters, which is why many home cooks reach for Thai Hom Mali Rice. Often referred to as a premium jasmine rice, it is prized for its delicate floral aroma, tender texture, and ability to complement a wide range of flavours.

One of the easiest ways to elevate a rice-based dish is to start with the right grain and resist the urge to overcook it. Fluffy, properly cooked Thai Hom Mali Rice creates the perfect contrast in recipes like this Crispy Rice Bang Bang Chicken Bowl from dietitian and mom content creator Elis Halenko, where texture plays just as important a role as flavour. Another simple tip? Cook extra rice and refrigerate it overnight. Chilled rice cooks beautifully, making it ideal for bowls, stir-fries, and other recipes.

Thai Hom Mali Rice is a fragrant, versatile pantry staple that can turn an everyday meal into something a little more memorable.

Now for the recipe:

Crispy Rice Bang Bang Chicken Bowl

Serves 4

Ingredients:

  • 1 cup uncooked Thai Rice (Thai Hom Mali jasmine rice) 
  • 2 tbsp sesame oil 
  • 2 tbsp soy sauce
  • 12 chicken tenders 
  • 4 baby cucumbers, chopped
  • 2 medium carrots, julienned
  • ½ cup red onion, pickled in white balsamic vinegar (it’s sweet!)
  • 2 avocados, diced
  • ¼ cup cilantro

Sauce:

  • ¼ cup mayo
  • ¼ cup Greek yogurt
  • ¼ cup sweet chili sauce
  • Juice of 1 lime

Directions:

  1. Cook rice according to package instructions. Let cool slightly.
  2. Toss rice with sesame oil and soy sauce, spread on a pan. Mix well and bake at 425 F for 20-30 minutes, flipping halfway until crispy. 
  3. Cook chicken tenders until golden and cooked through, then chop into bite-sized pieces.
  4. In a bowl, mix mayo, Greek yogurt, sweet chili sauce, and lime juice, set aside. 
  5. Toss crispy rice with cucumbers, carrot, red onion, avocado, cilantro, and chicken.
  6. Drizzle with sauce, toss gently. Serve immediately.
