Travel is back and it’s time to think about your next holiday and Traveling Tastebuds is here to bring you a little inspiration. Belize, our next stop, has the world’s second-largest barrier reef, beautiful sandy beaches, lush jungle and of course great food like fish tacos! The recipe comes to us by way of Matachica Resort and Spa right by the sea and the barrier reef. The resort is private and relaxing with 32 vibrantly colored individual casitas and villas. The adults-only resort is perfect for honeymooners or those crazing a little r & r.

Belize’s culinary scene is diverse and unique. The Creole culture is quintessentially Belizean. Creole or “Kriol” was originally a mixture of British and African settlers, but today is has expanded to include other cultures, such as Maya and Mestizo. The unique blend of cultures to create one unique taste is quintessentially Belizean. The country’s cuisine is known to have bold flavours and unique ingredients that make it a culinary adventure.

The ingredients at Matachia’s restaurants are sourced locally. You’ll find these delicious tequila lime fish tacos that more traditional food lovers will enjoy. And now for the recipe:

Ingredients:

  • 1 Can of Chile Chipotle
  • 1 Shot Tequila
  • 3 Tablespoons lime juice
  • Salt to taste
  • 2 oz Tomatoes
  • 2 oz Onion
  • 1 oz Cilantro
  • 1/2 oz Garlic
  • 5 oz Fish
  • 1/2 oz Olive oil
  • 3 Corn tortillas

Instructions:

  1. Blend the chipotle, tequila, lime juice and salt
  2. Dice tomatoes, onions and mince the
  3. Heat your frying pan and add olive Sauté tomatoes, onions and garlic. Add fish. Add chipotle blend just before removing from pan. Add a splash of lime juice, salt, and pepper to taste.
  4. Serve the fish tacos on three corn tortillas and garnish with cilantro.
