Strawberry-Raspberry Skyr Popsicles

Popsicles are everyone’s favourite summer treat, but, they are often filled with artificial flavours and colours.  One way around this is to make your own so that you know what your little ones are eating.  We love this recipe from President’s Choice.  They are made with kefir and skyr (a low fat dairy product that originated in Iceland). Enjoy this refreshing dessert to beat the heat.

Preparation time: 20 minutes

Serves: 6

Ingredients:

1 cup (250 mL) PC Strawberry Skyr Icelandic Style 0% M.F. Yogurt

1 tbsp (15 mL) liquid honey

1/2 cup (125 mL) PC Organics Plain Kefir Probiotic Fermented 1% M.F. Milk

1/2 cup (125 mL) PC Pure Raspberry Jam

1/2 cup (125 mL) roasted pistachios finely chopped

Directions:

  • Whisk together skyr, jam and kefir in bowl. Transfer mixture to popsicle molds and freeze for 4 hours or overnight.
  • Unmold. Brush honey over top two-thirds of each popsicle then dip in pistachios, pressing firmly to adhere.
