These cheesy burgers are so good, tailgaters will swear that you bought them! A grilling tip from Stachyra, while charcoal is less expensive, many stadiums prohibit its use, so consider propane which lights faster, has better heat control, quicker cooling times, and is easier to clean.

Ingredients for Double Smash Burgers
2 lbs. ground chuck (80/20) mix
Salt and pepper, to taste
2 large onions, sliced
8 Castello Havarti cheese slices
16 round sliced pickles
8 slices thin cut bacon, cut in half
Lettuce, for topping
Tomato slices, for topping
4 Brioche buns
Parchment paper, for smashing
Burger Sauce
1/4 cup mayonnaise
2 tbsp mustard
3 tbsp ketchup
2 tbsp relish
Method
Preheat your grill or smoker to 275ºF (135ºC), indirect heat.
Prepare the bacon-wrapped pickle chips: With a paper towel, pat the pickles dry. Wrap each pickle chip with a half-strip of bacon. Place seam side down on a lined baking tray. Grill for about 45 minutes or until the bacon is to your liking.
Prepare the burger sauce: In a medium bowl, mix to combine the mayonnaise, mustard, ketchup, and relish.
Preheat your griddle to medium-low.
Form 2-inch balls with the meat, do not overwork. You should have 8 balls.
Sauté the onions until they are soft and translucent. Set aside.
Place the burgers on the griddle, making sure to leave enough space in between them since we will be smashing them down.
Place a piece of parchment paper overtop the meat and press down with a burger smasher or spatula, smashing the burgers thin. Once all the burgers are smashed, season with salt and pepper on both sides.
Cook for 1-2 minutes, or to your liking, and flip the burgers. Place some sautéed onions and a slice of Castello Havarti cheese on each burger patty. Continue cooking until the cheese melts.
While the burgers are cooking, toast the buns by brushing some butter on the tops of the buns. Toast until they are golden brown.
Assemble the smash burgers: Spread some burger sauce on the top and bottom bun, top with 4 bacon-wrapped pickle chips on the bottom, 2 cheesy burger patties, a slice of tomato, and lettuce.
