Turkey is a great base for a variety of dishes including this recipe for Healthy Black Garlic Turkey Noodles by Chef Nick Liu. The Chef and Owner of one of Toronto’s hottest restaurants, DaiLo, Liu is known for creating delicious and modern Asian dishes AKA New Asian Cuisine. He created Healthy Black Garlic Turkey Noodles to lighten things up after Lunar New Year. This recipe is a twist on Ho Fun Noodles and you can add whatever vegetables that you like. The base of course, is Canadian turkey.
Ingredients
6 oz Rice noodles, submerged under boiling water DO THIS FIRST BEFORE PREPPING ANYTHING ELSE
3 tablespoons Sesame oil
1/2lb Ground turkey
1/2 cup Garlic scapes, cut into 1 inch piece
1/2 cup Honey mushrooms
1 tablespoon Ginger, minced
1 tablespoon Garlic, minced
2 heads Black garlic
3 tablespoons Sweet soy sauce
Salt & pepper
Method
Stain your noodles in a colander and toss with 1 tablespoon of sesame oil and put aside until needed.
Tip – for best results allow noodle’s to soak for 10 minutes in boiling water and rinse then soak in cold water. Do this before preparing the rest of the ingredients for this recipe
Blend together sweet soy, black garlic and 1/2 cup water. Set aside sauce until needed.
Heat 2 tbsp oil in a large non stick pan or wok over high heat. Add the turkey mince to the pan, season with salt & pepper and fry for 5-10 mins until golden brown and crispy, break up the meat with a wooden spoon.
Add the ginger and garlic to the pan and cook for 1 minutes. Add garlic scapes and mushrooms and cook for an additional 1 minute.
Add strained noodles to your wok and season with salt & pepper and sauté for 1 minute.
Add sauce and sauté for another 1-2 minute, toss well and season to taste.
Plate on a sharing platter.
Optional – garnish with coriander leaves, sliced green onion and your favourite chili sauce and enjoy!!
