Turkey Pepperoni Pizza Cups Recipe

Pizza is the ultimate Super Bowl party food. This year, the parties may be smaller, but that doesn’t mean that you can’t enjoy all of your favourites. Suki Hariharan from Relish the Bite created turkey pepperoni pizza cups that are the perfect size if you want to have try a bunch of appetizers or if you want to still enjoy the big game and not overeat. If you have leftovers, turkey pepperoni pizza cups are perfect for breakfast or an afternoon snack!

Serves: 12 cups

Prep time: 10 mins

Cooking Time: 25 mins

Ingredients:

  • 1 ½ cups plain all-purpose flour
  • 2 tsp baking powder
  • 2 tsp salt
  • 1 ½ cups milk
  • 1 Tbsp chopped basil leaves
  • ½ cup store-bought pizza sauce
  • 2 eggs
  • 1 Tbsp chopped jalapeño (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup store-bought pizza sauce
  • 1 cup Turkey Pepperoni, cut into small size slices

Directions:

  1. Arrange a rack in the middle of the oven and heat to 375°F.
  2. Liberally grease your muffin pan with olive oil.
  3. In a large bowl combine flour, baking powder and salt.
  4. Next whisk in the milk, basil, jalepeno and eggs until combined.
  5. Add about two tablespoons of batter to each muffin cup to fill it ¾ full. Add a layer of cheese followed by sauce, a few turkey pepperoni slices, then cheese again.
  6. Lastly, top with a few pepperonis. Repeat the process until you’ve filled all 12 muffin cups.
  7. Bake for about 20-25 mins, until lightly browned and puffed. Enjoy immediately!
