Today, we are sharing a tasty alternative to your #tacotuesday menu – tacos with shrimp, avocado and mango. As delicious as anything that you will find in a Mexican restaurant, they are easy to cook and best of all, the whole family will love them. This recipe makes 6 tacos and will takes you less than 30 minutes to cook.
Ingredients
18 large shrimp, peeled and de-veined
2 tablespoons vegetable oil
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon paprika
½ teaspoon cayenne pepper
Juice of 1 lime
4 garlic cloves, chopped
½ cup cilantro, chopped
Salt and pepper to taste
2 Avocados from Mexico, diced
Juice of 1 lime
1 mango, diced
½ jalapeño, diced
½ red onion, minced
½ cup cilantro, chopped
½ red pepper, diced
1 tablespoon olive oil
Salt and pepper to taste
6 taco tortillas
Directions
Pour the oil into a skillet over medium heat. Sauté the shrimp 4 to 5 minutes with the cumin, chili powder, paprika, cayenne pepper and lime juice. Add the garlic and cilantro and continue to cook for an additional minute. Season with salt and pepper and set aside.
Mix together all of the salsa ingredients, saving some of the cilantro as garnish.
Fill the tortillas with the salsa, add the shrimp, and garnish with cilantro.
