Amy Stopnicki, cookbook author of Kosher Taste, provided this delicious Hanukkah recipe. The Toronto resident shared 100 of her favourite recipes in the Gourmand Culinary Award-winning cookbook, but this isn’t one of them. What you will find in the cookbook are recipes for Soups and Salads, Sides, Mushrooms, Fish and Dairy, Mains, Trendy Recipes and Sweet Treats and more.
If you are a Hanukkah traditionalist, you of course, love potato latkes. The Festival celebrates the miracle of oil, but Hanukkah isn’t just about potato latkes alone. There are many different recipes with oil that you can try. This Hanukkah recipe for Apple Fritter Cigars, will liven up dessert if you are need a break from Sufganiyot (Israeli doughnuts).
Now for what is sure to be a classic Hanukkah recipe:
Ingredients
1-2 tablespoons oil
3-4 apples, finely diced (Amy likes Royal Gala Apples)
1/3 cup brown sugar
2-3 tablespoons water
1 teaspoon vanilla
1-2 teaspoons cinnamon
1 package Gefen Egg Roll Wraps
Oil for frying
2-3 tablespoons white sugar
1 teaspoon cinnamon
Directions
1. Heat oil to medium heat.
2. Add apples and sauté until tender.
3. Add brown sugar, water, vanilla and cinnamon.
4. Continue cooking until apples are cooked and most of the water has evaporated. (Let cool)
5. When mixture is cool begin to roll your cigars. Place wonton wrappers on flat surface. Spoon 1 tablespoon of your apple filling onto wrapper, near the end closest to you. Fold sides in (small fold), and continue rolling.
6. Roll up and seal off edges with a little water.
7. Heat oil to medium high/high heat for frying.
8. Once oil is hot fry for 1 minute on each side or until golden on the outside.
9. Combine sugar and cinnamon.
10. Dip your warm cigars in the cinnamon sugar and enjoy!
