DIVINE X Dole Canada
You don’t need to rush in the morning to make your kids’ breakfast. Chef Cory Vitiello teamed up with Dole Canada to create healthy, simple meal and snack ideas. An overnight recipe like Pineapple & Coconut Chia Seed Pudding means that there is no wait time for the most important meal of the day. Dole Pineapple Tidbits and other toppings are added in the morning. It’s that easy!
Serves: 6
Special Equipment: Large mason jar or glass bowl; parfait bowls
Ingredients:
½ cup chia seeds
2½ cups unsweetened coconut milk
¼ tsp cinnamon
½ tsp vanilla extract
Mix all ingredients thoroughly in a glass jar. Let the chia seed sit overnight in the refrigerator to swell. Shake the contents of the jar in the morning before service to break up and let any clumps of chia absorb the coconut milk.
To Serve:
Lay out the garnish in small bowls and allow your kids to assemble their own parfaits.
You can add any extra garnishes you have on hand, as well. This is a good one to improvise with, but here are our favourites:

Maple syrup
Granola
