Affogato is a lesson in simplicity when it comes to dessert. Traditional affogato is made with two simple ingredients – vanilla gelato and espresso. Fun fact – affogato literally means “to drown” in Italian. It basically means that you are drowning the cold gelato with the heat of the espresso. With Mother’s Day coming up, we wanted to add a little more complexity to the dessert, yet still keep the heritage of the dessert intact.
Preparation:
- Preparation 15 mins.
- Chill four hours or overnight.
Shopping List:
- 5oz Baileys Original Irish Cream
- ½ cup of espresso
- 1 sunken chocolate cake or your favourite unfrosted cake from the grocery store
- Two scoops of vanilla ice cream

Directions
Step 1: Put two shots of espresso into a jug and pour in the Baileys.
Step 2: Firmly press a cookie cutter into the cake to lift out two rounded pieces. Add one piece to the bottom of two champagne saucer glasses.
Step 3: Add a scoop of ice cream on top of the cake in the glass.
Step 4: Pour the Baileys and espresso mixture over the top.
Step 5: Dig in!
