Ashley Fehr from @thereciperebel created this easy turkey stock recipe. Turkey stock has richer flavour than other stocks. You can use turkey stock for more than just soup. It is the perfect base for risotto or quinoa. You can use it as a braising liquid for turkey. It is a delicious base for vegetable dishes and pastas. The uses and recipe possibilities are endless. It also means that if you buy a whole turkey, none of it has to go to waste. If you don’t have a full turkey carcass, local butchers often sell packages of turkey bones that you can use for broth.

Prep time: 5 minutes
Cooking Time: 2 hours
Ingredients:
1 turkey carcass, most of the meat removed
6 litres water
2 onions, quartered
3 large carrots, cut into 4 pieces
3 ribs of celery, halved lengthwise
1 tablespoon Italian seasoning
2 bay leaves
1 tablespoon minced garlic or 2 garlic cloves
Directions:
- Place all of the ingredients in a large soup or stock pot.
- Bring to a boil over medium-high heat, then reduce heat to medium-low, cover and simmer for as little as 1 hour or up to 4 hours. The longer it simmers, the more flavor it will have.
- Let cool slightly and strain.
- Use immediately to make soup, or store in the refrigerator for several days or freezer up to 3 months
