Grilled Potato Salad with Fresh Vinaigrette

Summer BBQ season is here, and we all need a little inspiration to perk up an old favourite – potato salad.  It is perfect with so many dishes and it doesn’t have to be hard to make.  Chef Michael G. shared his tasty recipe with us.  We can’t wait to try this one out.

Ingredients:

– 6 Large Potatoes
– 2 Large Spanish Onions
– Olive Oil
– Dijon Mustard
– Mayo
– Vinegar (I used Sherry)
– Honey
– Worcestershire
– Herbs (Parley & Chive)
Dressing:
– Mix together 2 parts oil with one part vinegar. (ie., 1/4 oil to 1/8 vinegar)
– Add 1 tbsp of Dijon, mayo, honey and Worcestershire each. Season with salt & pepper
The star ingredients.
Instructions:
– Slice potatoes and onions in 1/2 inch thick slices (wash the potatoes and remove the onion skins)
– Lightly oil and season with salt and pepper. Add to a medium-high heat grill and grill on both sides for about 12 minutes per side
– Chop the potatoes and onions in rough cubes. Toss in dressing to cover generously with chopped parsley or other fresh herbs. Garnish with freshly chopped chives and enjoy 🙂
