Do you have a sweet tooth but are on the lookout for healthier options? Spa style desserts are a way to enjoy dessert, like this creamy Greek Yogurt Panna Cotta from Omni La Costa in beautiful Carlsbad, California.  In our latest edition of Traveling Tastebuds, we are not only sharing the recipe for Greek Yogurt Panna Cotta, we are giving you a peek at the property and our upcoming content on Carlsbad.

The Omni La Costa Resort & Spa just completed a multi-million dollar renovation in the spring of this year. It’s 400 acres house championship golf courses, 8 resort pools and best of all (in our opinion) an award winning spa. It is also pet friendly if you can’t bear to leave Rover behind. The resort also features multiple dining options including the Spa Café.

The location is ideal – you are just a short drive to San Diego, California or you can enjoy everything that Carlsbad has to offer like ideal weather year round and 7 miles of beaches where you won’t have to fight to find your place in the sand. Carlsbad has a remarkable food scene and something for everyone whether you have a young family or you are young at heart.

Now, let’s skip over to dessert so that you can try this recipe for Greek Yogurt Panna Cotta from Omni La Costa at home:

Ingredients:

Heavy Cream – 224 grams (1 cup)
Granulated white sugar – 112 grams (1/2 cup)
Gelatin Sheets (Gold) – 2 ½ ea
Greek Yogurt – 380 grams (1 and 2/3 cup)

Steps:

  1. Measure out all ingredients and bloom the gelatin sheets in cold water.
  2. In a small pot, heat up half of the heavy cream with the sugar until warm and sugar is dissolved, does not need to reach a boil
  3. Remove from the heat and add bloomed gelatin sheets into the pot and mix until the gelatin is completely melted into the cream
  4. Add in the last half of the cold cream, along with the Greek yogurt and mix until combined.
  5. Pour into desired cups and let set in the fridge for at least 2 hours.
  6. Serve cold with your favorite fruits or compotes and enjoy!
