Measure out all ingredients and bloom the gelatin sheets in cold water.

In a small pot, heat up half of the heavy cream with the sugar until warm and sugar is dissolved, does not need to reach a boil

Remove from the heat and add bloomed gelatin sheets into the pot and mix until the gelatin is completely melted into the cream

Add in the last half of the cold cream, along with the Greek yogurt and mix until combined.

Pour into desired cups and let set in the fridge for at least 2 hours.
