That\u2019s why grade 12 student and eco-advocate, Lacia Paige Cummings has created a sustainable back-to-school menu that will elevate lunch hour with a healthy and sustainable twist!&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Lacia was a winner of Tre Stelle\u2019s <a href=\"https:\/\/divine.ca\/en\/cheese4change-eco-friendly-habits-that-reward-cash\/\">Cheese4Change<\/a> sustainable food youth program which encourages Canadian teachers and students to submit their sustainable recipes. With hundreds of entries from coast-to-coast, winning students received $500 and winning schools received $5,000!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Canadian students got creative with recipes like \u2018Canadiana\u2019 Poutine made with organic potatoes and Canadian Mozzarella, and Paneer Bhurji with Tre Stelle Paneer and seasonal vegetables. She loved Summer\u2019s decision to make everything bite sized on a skewer as that made it irresistible to kids and adults alike.&nbsp; Shake some olive oil and balsamic vinegar in a cup and let everyone dip at their leisure.&nbsp;&nbsp;&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Makes 18 Mini Skewers<\/span><\/p>\n<h3 id=\"ingredients\"><span style=\"font-weight: 400;\">Ingredients:<\/span><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">18 Cherry tomatoes<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">18 Tre Stelle Mini Bocconcini<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">18 Basil leaves<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">18 Mini skewers<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 Tbs Extra-virgin olive oil, for drizzling<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 Tbs Balsamic vinegar&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Freshly ground black pepper to taste&nbsp;<\/span><\/li>\n<\/ul>\n<h3 id=\"instructions\"><span style=\"font-weight: 400;\">Instructions:<\/span><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Thread the tomatoes, mozzarella, and basil onto mini skewers.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add olive oil and balsamic vinegar to a container for dipping, shake and and sprinkle with pepper.<\/span><\/li>\n<\/ul>\n<h2 id=\"lacias-salmon-sausage-pizza-with-feta\">Lacia\u2019s Salmon &amp; ensure nothing went to waste, and the result was mouthwatering, featuring salmon, sausage and feta.<\/span><\/p>\n<h3 id=\"ingredients-2\"><span style=\"font-weight: 400;\">Ingredients:<\/span><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 mL&nbsp; Homemade pizza \/ tomato sauce&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 mL&nbsp; Chopped spinach<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 mL&nbsp; Small tomatoes<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 mL&nbsp; Shredded salmon<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 mL&nbsp;
