Israeli Couscous Chopped Salad with Smoked Salmon is the latest, and we love that it&#8217;s light &#8211; it&#8217;s the perfect summer dish. There is no cooking involved which is nice, especially with the summer heat.<\/p>\n<p><span style=\"font-weight: 400;\">Everyone should have a great chopped salad in their repertoire for those times when you want a salad that actually feels like a meal. Enter MSC certified sustainable smoked salmon with an Israeli Couscous Chopped Salad. The best part about this recipe is it can stay fresh and crunchy in the fridge for up to 3 days, without the dressing of course. Just save the avocado for when it\u2019s time to serve and eat.&nbsp;<\/span><\/p>\n<p><b>Prep: <\/b><span style=\"font-weight: 400;\">30 minutes<\/span><\/p>\n<p><b>Cook Time: <\/b><span style=\"font-weight: 400;\">10- 15 minutes<\/span><\/p>\n<p><b>Serving size: <\/b><span style=\"font-weight: 400;\">4 as a main course for lunch or dinner or great as a side dish<\/span><\/p>\n<p><b>Experience level:<\/b><span style=\"font-weight: 400;\"> Beginner<\/span><\/p>\n<h2 id=\"israeli-couscous-chopped-salad-with-smoked-salmon-ingredients\">Israeli Couscous Chopped Salad with Smoked Salmon Ingredients:<\/h2>\n<p><span style=\"font-weight: 400;\">1 pack (150 g) MSC certified sustainable smoked wild salmon, cut into bit-sized pieces<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 cup cooked Israeli couscous<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 cup cucumber, chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd cup cherry tomatoes, chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd cup celery chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 cup Iceberg lettuce, chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 ripe avocado, chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2-3 spring onions, chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For the dressing:<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\/4 cup extra-virgin olive oil<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tbsp white wine vinegar<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 tbsp Dijon mustard<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 tsp white sugar<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Salt and pepper to taste<\/span><\/p>\n<h2 id=\"how-to\">How-to:<\/h2>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a small bowl, whisk together all the ingredients for the dressing and season to your liking.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a large mixing bowl mix together all the remaining ingredients for the salad.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Drizzle with the dressing and mix gently.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Serve or keep in the fridge for a few hours or up to 3 days.&nbsp;&nbsp;<\/span><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<div class=\"post-excerpt\">We are back with Fish Fridays as Canadian chef and Marine Stewardship Council ambassador Charlotte Langley shares another ocean friendly, lunch or dinner recipe with us.
