Fresh garlic gives it just the right amount of bite, and tinned smoked salmon shines as an unexpected \u2018sando\u2019 star.&nbsp;<\/p>\n<p><a href=\"https:\/\/divine.ca\/en\/healthy-black-garlic-turkey-noodles-by-chef-nick-liu\/\">Canadian chef<\/a> and <a href=\"https:\/\/www.msc.org\/?gad=1&amp;gclid=CjwKCAjwvJyjBhApEiwAWz2nLQklwUbpTjT166-hMc_5CwGX_zpMlsaQtEpuZhpBVEEmoxh23PGRehoCPpkQAvD_BwE\" target=\"_blank\" rel=\"noopener\">Marine Stewardship Council<\/a> ambassador Charlotte Langley is sharing her ocean friendly, easier on the budget recipes with us in our Fish Fridays series. Here is her recipe for the fish &#8220;grinder&#8221; sando.<\/p>\n<p><b>Pro Tip:&nbsp; <\/b><span style=\"font-weight: 400;\">If you can find it, fresh lavash bread is amazing for this fish &#8220;grinder&#8221; sando. Otherwise use as thin a loaf as you can, like a nice focaccia. <\/span><b>&nbsp;<\/b><\/p>\n<p><b>Prep: <\/b><span style=\"font-weight: 400;\">15 minutes<\/span><\/p>\n<p><b>Cook Time: <\/b><span style=\"font-weight: 400;\">5 minutes<\/span><\/p>\n<p><b>Serving size: <\/b><span style=\"font-weight: 400;\">2 as a main course for lunch or dinner<\/span><\/p>\n<p><b>Experience level:<\/b><span style=\"font-weight: 400;\"> Beginner<\/span><\/p>\n<h2 id=\"ingredients\">Ingredients:<\/h2>\n<p><span style=\"font-weight: 400;\">2 tins (approx. 150 g ea.) MSC certified sustainable smoked salmon (or substitute for non-smoked tinned salmon)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 slices fresh lavash bread or \u00bd a focaccia sliced lengthwise in two<\/span><\/p>\n<p><span style=\"font-weight: 400;\">5 slices of provolone cheese<\/span><\/p>\n<p><span style=\"font-weight: 400;\">4 (180 g) cups iceberg lettuce, shaved<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 green pepper, sliced<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 large tomato, sliced<\/span><\/p>\n<h3 id=\"dressing\">Dressing:&nbsp;<\/h3>\n<p><span style=\"font-weight: 400;\">1\/2 cup (125 ml) mayo<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd cup (64 g) grated parmesan<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 tbsp (15 ml) red wine vinegar<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bc cup (37 g) pepperoncini, roughly chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 tsp (5 g) fresh garlic, grated or minced<\/span><\/p>\n<h2 id=\"how-to\">How-to:<\/h2>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Preheat oven to broil.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a medium sized bowl, mix the mayo, parmesan, red wine vinegar, pepperoncini and garlic. Toss Iceberg lettuce with the mayo dressing and set aside.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Top one piece of lavash (or one half of the focaccia) with the provolone. Broil until melted and bubbly.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Remove from oven and top generously with the iceberg mixture, green peppers and tomato slices.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a small bowl, using a fork break up the smoked salmon with the oil from the tin into bit sized chunks.
