These cheesy burgers are so good, tailgaters will swear that you bought them! A grilling tip from <a href=\"https:\/\/divine.ca\/en\/buffalo-blue-cheese-wings-recipe-paula-stachyra\/\">Stachyra<\/a>, while charcoal is less expensive, many stadiums prohibit its use, so consider propane which lights faster, has better heat control, quicker cooling times, and is easier to clean.<\/p>\n<p>Now for the recipe for Double Smash Burgers.<\/p>\n<p>Servings: 4<\/p>\n<h2 id=\"ingredients-for-double-smash-burgers\"><u>Ingredients for Double Smash Burgers<\/u><\/h2>\n<p>2 lbs. ground chuck (80\/20) mix<\/p>\n<p>Salt and pepper, to taste<\/p>\n<p>2 large onions, sliced<\/p>\n<p>8 <a href=\"https:\/\/www.castellocheese.com\/en-ca\/products\/castello-creamy-havarti-slices-165g\/\" target=\"_blank\" rel=\"noopener\">Castello Havarti cheese slices<\/a><\/p>\n<p>16 round sliced pickles<\/p>\n<p>8 slices thin cut bacon, cut in half<\/p>\n<p>Lettuce, for topping<\/p>\n<p>Tomato slices, for topping<\/p>\n<p>4 Brioche buns<\/p>\n<p>Parchment paper, for smashing<\/p>\n<p><strong>Burger Sauce <\/strong><\/p>\n<p>1\/4 cup mayonnaise<\/p>\n<p>2 tbsp mustard<\/p>\n<p>3 tbsp ketchup<\/p>\n<p>2 tbsp relish<\/p>\n<h2 id=\"method\">Method<\/h2>\n<p>Preheat your grill or smoker to 275\u00baF (135\u00baC), indirect heat.<\/p>\n<p>Prepare the bacon-wrapped pickle chips: With a paper towel, pat the pickles dry. Wrap each pickle chip with a half-strip of bacon. Place seam side down on a lined baking tray. Grill for about 45 minutes or until the bacon is to your liking.<\/p>\n<p>Prepare the burger sauce: In a medium bowl, mix to combine the mayonnaise, mustard, ketchup, and relish.<\/p>\n<p>Preheat your griddle to medium-low.<\/p>\n<p>Form 2-inch balls with the meat, do not overwork. You should have 8 balls.<\/p>\n<p>Saut\u00e9 the onions until they are soft and translucent. Set aside.<\/p>\n<p>Place the burgers on the griddle, making sure to leave enough space in between them since we will be smashing them down.<\/p>\n<p>Place a piece of parchment paper overtop the meat and press down with a burger smasher or spatula, smashing the burgers thin. Once all the burgers are smashed, season with salt and pepper on both sides.<\/p>\n<p>Cook for 1-2 minutes, or to your liking, and flip the burgers. Place some saut\u00e9ed onions and a slice of Castello Havarti cheese on each burger patty. Continue cooking until the cheese melts.<\/p>\n<p>While the burgers are cooking, toast the buns by brushing some butter on the tops of the buns.
