The active lifestyle of the Granite State, also known as the Switzerland of America, means working up an appetite. Fortunately, there are many great restaurants to enjoy.<\/p>\n<p><span style=\"font-weight: 400;\">Zachary Squier is the Executive Chef of <a href=\"https:\/\/www.stonefacebrewing.com\/\" target=\"_blank\" rel=\"noopener\">Stoneface Brewing Co.<\/a> of Newington, NH.\u00a0 The beer is brewed on the sea coast of New Hampshire. They also serve what can only be described as elevated pub food. Squier highlights New England farmers and producers in his recipes, including this recipe for his Roasted Beet Hummus with Feta and Herbs. Enjoy Roasted Beet Hummus on your next Meatless Monday or whenever you just want a twist on the traditional Middle Eastern favourite.<\/span><\/p>\n<h2 id=\"ingredients\">Ingredients:<\/h2>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">8oz red beets (about 2 medium sized)<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 15.5oz can chickpeas drained and rinsed<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 Tablespoon tahini paste<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 Tablespoon lemon juice<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 cloves garlic<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1\/4 cup olive oil<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 teaspoon kosher salt<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1\/2 teaspoon cumin<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">fresh mint for garnish<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">fresh dill for garnish<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">feta for garnish<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">crackers for serving<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1605984 size-full\" src=\"https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/STONEFACE-CHEF-ZACHARY-SQUIER-1.jpg\" alt=\"\" width=\"600\" height=\"600\" data-wp-editing=\"1\" srcset=\"https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/STONEFACE-CHEF-ZACHARY-SQUIER-1.jpg 600w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/STONEFACE-CHEF-ZACHARY-SQUIER-1-80x80.jpg 80w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/STONEFACE-CHEF-ZACHARY-SQUIER-1-320x320.jpg 320w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/STONEFACE-CHEF-ZACHARY-SQUIER-1-560x560.jpg 560w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/STONEFACE-CHEF-ZACHARY-SQUIER-1-90x90.jpg 90w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<h2 id=\"directions\">Directions:<\/h2>\n<p><span style=\"font-weight: 400;\">1\u00a0Preheat oven to 400 degrees and Wrap beets in foil individually\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 Roast beets for 45 minutes, checking until a toothpick easily penetrates beet to center.\u00a0 Let cool in foil.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3 Once beets are cool, combine with garlic in food processor; blend until smooth.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">4 Add chickpeas, tahini, lemon juice, salt and cumin bend until incorporated, adding olive oil slowly.
