Chef <span style=\"font-weight: 400;\">Jacky Francois from <a href=\"https:\/\/www.omnihotels.com\/hotels\/bretton-woods-mount-washington\" target=\"_blank\" rel=\"noopener\">Omni Mount Washington Resort<\/a> shared his recipe for Blueberry Maple Breakfast Sausage. Omni Mount Washington Resort is an all-season resort destination located at the base of Mount Washington and surrounded by the White Mountain National Forest. The resort has a number of dining venues to choose from. They serve delicious breakfasts that may include the Blueberry Maple Breakfast Sausage.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Homemade breakfast sausage is apparently the easiest sausage to make. Shape the sausage into patties and cook it that way if you don&#8217;t want to stuff casing. It can also be rolled into a log, wrapped in plastic and frozen and disks can be cut as needed. This breakfast sausage is best saut\u00e9ed but it can be roasted as well.\u00a0<\/span><\/p>\n<figure id=\"attachment_1605660\" aria-describedby=\"caption-attachment-1605660\" style=\"width: 600px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1605660\" src=\"https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/ChefFrancois.jpg\" alt=\"\" width=\"600\" height=\"711\" srcset=\"https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/ChefFrancois.jpg 600w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/ChefFrancois-320x379.jpg 320w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/02\/ChefFrancois-560x664.jpg 560w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><figcaption id=\"caption-attachment-1605660\" class=\"wp-caption-text\">Photo Courtesy of New Hampshire<\/figcaption><\/figure>\n<h2 id=\"ingredients\"><b>Ingredients\u00a0<\/b><\/h2>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 pound boneless pork shoulder butt diced or ground pork\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 tsp kosher salt<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 tablespoon frozen blueberries<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 medium garlic clove, minced\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">\u00bd tsp ground black pepper<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 ounce ice water<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 ounce maple syrup\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">4 feet sheep casings or 2 feet hog casings, soaked in tepid water for at least 30 minutes and rinsed (*see note on Step 5)\u00a0<\/span><\/li>\n<\/ul>\n<h2 id=\"instructions\"><b>Instructions\u00a0<\/b><\/h2>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Combine all the ingredients except the water and maple syrup and toss to distribute the seasonings. Chill until ready to grind. If using ground pork, skip to step 3\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Grind the mixture through the small die into a bowl set in ice\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the water and maple syrup to the meat mixture and mix until the liquid is incorporated and the mixture has developed a uniform, sticky appearance<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Saut\u00e9 a small portion of the sausage, taste, and adjust the seasoning if necessary\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Stuff the sausage into the casings and twist into 4-inch links, or shape into patties. Refrigerate or freeze until ready to cook. *You can also roll it into a log, wrap in plastic wrap and freeze, then slice into patties\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Gently saut\u00e9 or roast the sausage to an internal temperature of 150 degrees F. <\/span><\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<div class=\"post-excerpt\">We are back in beautiful New Hampshire for \u201cTraveling Taste Buds\u201d and this time we are serving up breakfast.
