In addition to being the first UNESCO City of Gastronomy in the USA, <a href=\"https:\/\/www.visittucson.org\/\" target=\"_blank\" rel=\"noopener\">Tuscon<\/a> is also part of the Sonoran Desert known for the giant saguaro cacti. With year-round sunshine, hiking, spas and much more, why not put it on your bucket list?<\/p>\n<p>Tuscon&#8217;s <a href=\"https:\/\/bocatacos.com\/\" target=\"_blank\" rel=\"noopener\">BOCA Tacos Y Tequila Restaurant<\/a> offers authentic Sonoran, Mexican cuisine. Chef Maria Mazon, the Founder, Owner and Executive Chef is behind the unique menu at the restaurant. The James Beard Semi-Finalist makes Mexican food a dining experience. Why not try making more authentic tacos for your next Taco Tuesday? Chef Mazon shared her recipe for Rajas Tacos with us:<\/p>\n<h2 id=\"ingredients\">Ingredients:<\/h2>\n<p><span style=\"font-weight: 400;\">10 Poblano peppers<\/span><\/p>\n<p><span style=\"font-weight: 400;\">5 Anaheim peppers<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd white onion, thinly sliced<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3 12-ounce cans evaporated milk (soy milk can be substituted)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tablespoons of butter (or any substitute)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Salt to taste (about one tablespoon)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tablespoons of garlic powder<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Fresh ground pepper<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3 tablespoons of canola oil<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 cup of queso chihuahua (Monterey Jack cheese may be substituted)<\/span><\/p>\n<figure id=\"attachment_1606590\" aria-describedby=\"caption-attachment-1606590\" style=\"width: 600px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1606590\" src=\"https:\/\/divine.ca\/wp-content\/uploads\/2021\/03\/maria-mazon-headshot-sorta.jpg\" alt=\"\" width=\"600\" height=\"397\" srcset=\"https:\/\/divine.ca\/wp-content\/uploads\/2021\/03\/maria-mazon-headshot-sorta.jpg 600w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/03\/maria-mazon-headshot-sorta-320x212.jpg 320w, https:\/\/divine.ca\/wp-content\/uploads\/2021\/03\/maria-mazon-headshot-sorta-560x371.jpg 560w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><figcaption id=\"caption-attachment-1606590\" class=\"wp-caption-text\">Photo Courtesy of: BOCA Tacos Y Tequila Restaurant &amp; Visit Tucson<\/figcaption><\/figure>\n<h2 id=\"directions\"><span style=\"font-weight: 400;\">Directions:<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Place the peppers in a large bowl and coat them with oil. Then grill or broil them until they are charred, not burnt. Once the peppers are finished, place them in a plastic bag to make them easier to peel. Wait about 10-15 minutes (burning your hands is not fun).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0<\/span><span style=\"font-weight: 400;\">Once the peppers are peeled, take the \u201cmeat\u201d and place it flat on a cutting board. Leave in the seeds if you love heat (it is optional to leave them or take them out). Place one pepper on top of the other so it\u2019s easier to cut strips and place them aside once they are ready.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0<\/span><span style=\"font-weight: 400;\">In a pot over medium heat, add the butter, then the onion, cooking until they are near transparent. Then add the pepper strips, tossing to coat with the butter and onions.
