Michelle Wong of <a href=\"https:\/\/www.siftandsimmer.com\/\" target=\"_blank\" rel=\"noopener\">Sift &amp; Simmer<\/a> came up with this healthier version of taquitos &#8211; the perfect game day snack.\u00a0 The baked <a href=\"https:\/\/divine.ca\/en\/chef-suzanne-barrs-turkey-and-cornbread-kush\/\">turkey<\/a> and black bean taquitos are baked, not fried. Turkey is leaner than other choices so you can enjoy taquitos without the guilt. Liven up a weeknight meal too &#8211; why not try Taquito Tuesday for a change?<\/p>\n<p><strong>Serves:<\/strong> 12<\/p>\n<p><strong>Prep time:<\/strong> 30 minutes<\/p>\n<p><strong>Cooking time:<\/strong> 15 minutes<\/p>\n<h4 id=\"ingredients\"><strong>Ingredients:<\/strong><\/h4>\n<p>Refried black bean:<\/p>\n<p>-1\u00a0Tbsp\u00a0avocado oil\u00a0or any vegetable oil<\/p>\n<p>-1\u00a0Tbsp\u00a0white onion,\u00a0diced<\/p>\n<p>-1\u00a0can (14 oz)\u00a0black beans (or any bean that you like)\u00a0rinsed and drained<\/p>\n<h4 id=\"ground-turkey\">Ground turkey:<\/h4>\n<p>-\u00bd\u00a0lb\u00a0ground turkey<\/p>\n<p>-1\u00a0Tbsp\u00a0avocado oil\u00a0+ 1 tsp for spraying the taquitos<\/p>\n<p>-\u00bd\u00a0large\u00a0white onion,\u00a0diced<\/p>\n<p>-3\u00a0cloves\u00a0garlic,\u00a0minced<\/p>\n<p>-1 \u00bd\u00a0Tbsp\u00a0cumin powder<\/p>\n<p>-1\u00a0tsp\u00a0dried oregano<\/p>\n<p>-\u00bc\u00a0tsp\u00a0dried thyme<\/p>\n<p>-\u00bd\u00a0tsp\u00a0garlic powder<\/p>\n<p>-\u00bd\u00a0tsp\u00a0chili powder\u00a0(omit if you don&#8217;t like spicy)<\/p>\n<p>-\u00bc\u00a0tsp\u00a0coriander powder<\/p>\n<p>-\u00bd\u00a0tsp\u00a0sea salt<\/p>\n<p>-\u00bc\u00a0tsp\u00a0black pepper<\/p>\n<p>-12\u00a0corn tortillas\u00a0about 5-6&#8243; in diameter<\/p>\n<p>-ground turkey + black bean mixture (from above)<\/p>\n<p>-2\u00a0cups\u00a0shredded cheese<\/p>\n<h4 id=\"garnish\">Garnish:<\/h4>\n<p>-shredded lettuce<\/p>\n<p>-guacamole<\/p>\n<p>-pico de gallo (tomato salsa)<\/p>\n<p>-sour cream<\/p>\n<h2 id=\"directions\">Directions:<\/h2>\n<h4 id=\"make-the-refried-black-bean\">Make the refried black bean:<\/h4>\n<ol>\n<li>Heat 1 Tbsp of avocado oil in a frying pan over medium heat and add in 1 Tbsp diced white onion. Saut\u00e9 for 2-3 minutes over medium heat, until lightly softened.<\/li>\n<li>Add in the drained black beans. Reduce the heat.<\/li>\n<li>Saut\u00e9 the beans with the onion for 1-2 minutes, until heated through.<\/li>\n<li>Smash the beans with the back of a spatula, or potato masher, until it reaches the consistency of refried beans. It should be thick and hold together. Remove the bean mixture from heat. Cover and set aside.<\/li>\n<\/ol>\n<h4 id=\"make-the-ground-turkey\">Make the ground turkey:<\/h4>\n<ol>\n<li>Heat a large frying pan over medium high heat. (You can use the same pan from making the beans).<\/li>\n<li>Add in 1 Tbsp of avocado oil.<\/li>\n<li>Next, add in the diced onion and garlic. Saut\u00e9 until the onions soften, about 2 minutes.<\/li>\n<li>Add in the ground turkey and break it up with the back of a wooden spoon. Cook for about 5-6 minutes, until turkey is no longer pink.<\/li>\n<li>Add in the spices: 1 Tbsp cumin, 1 tsp dried oregano, \u00bc tsp dried thyme, \u00bd tsp garlic powder, \u00bd tsp chili powder (if using), \u00bc tsp coriander powder, \u00bd tsp salt and \u00bc tsp black pepper.<\/li>\n<li>Stir and saut\u00e9 the turkey mixture until aromatic, another 2-3 minutes.<\/li>\n<li>Add in the reserved black bean mixture and incorporate together with the turkey. Remove from heat and set aside.<\/li>\n<\/ol>\n<h4 id=\"assemble\">Assemble:<\/h4>\n<ol>\n<li>Lightly dampen a paper towel with water.<\/li>\n<li>Place a stack of 3 corn tortillas on the plate. Cover with the damp paper towel.<\/li>\n<li>Place the tortillas into the microwave for about 40 seconds, until steaming hot.<\/li>\n<li>Working quickly, sprinkle a little cheese at the bottom and the top of the corn tortilla.<\/li>\n<li>Add about 2 Tbsp of turkey\/bean filling over top of the cheese on the bottom of the tortilla &#8212; lengthwise, leaving a little gap at the edges.<\/li>\n<li>Roll tightly and let it sit seam-side down on a baking tray.<\/li>\n<li>Repeat with the remainder.<\/li>\n<li>Lightly spray the tops with a little avocado or vegetable oil.<\/li>\n<li>Preheat the oven to 400\u00b0F.<\/li>\n<li>Bake the taquitos at 400\u00b0F for 12-15 minutes, until lightly golden and crisp.<\/li>\n<li>Serve warm with shredded lettuce, guacamole, sour cream, and pico de gallo if you wish.<\/li>\n<\/ol>\n<h2 id=\"tip\">Tip:<\/h2>\n<p>Taquitos can be individually frozen in an airtight container for up to 3 months.<\/p>\n<p>To reheat, bake at 350\u00b0F for 15-20 minutes, until heated through.<\/p>\n<p>Recipe courtesy of\u00a0<a href=\"https:\/\/www.canadianturkey.ca\/\" target=\"_blank\" rel=\"noopener\">Think Turkey<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<div class=\"post-excerpt\">Super Bowl Sunday may look a little different this year, but that doesn&#8217;t mean that you can&#8217;t enjoy some great food!
