{"id":1600600,"date":"2020-08-05T00:17:41","date_gmt":"2020-08-05T04:17:41","guid":{"rendered":"https:\/\/divine.ca\/?p=1600600"},"modified":"2020-08-05T00:17:41","modified_gmt":"2020-08-05T04:17:41","slug":"wine-wednesdays-exploring-argentine-cabernet-sauvignon","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/wine-wednesdays-exploring-argentine-cabernet-sauvignon\/","title":{"rendered":"Wine Wednesdays: Exploring Argentine Cabernet Sauvignon"},"content":{"rendered":"<h3 id=\"divine-x-wines-of-argentina\"><strong>DIVINE x Wines of Argentina<\/strong><\/h3>\n<p>As the \u201ctour\u201d of <a href=\"https:\/\/divine.ca\/en\/wine-wednesdays-exploring-argentine-chardonnay-and-chardonnay-torrontes\/\">Argentine wines<\/a> continues, we switch our focus to red wine. \u00a0More than half of the wines produced in Argentina, 58% to be exact, are red. \u00a0This week, we are taking a closer look at \u201cthe king of reds\u201d, Cabernet Sauvignon.<\/p>\n<h3 id=\"wines-of-argentina-cabernet-sauvignon\"><strong>Wines of Argentina: Cabernet Sauvignon<\/strong><\/h3>\n<p><strong>About the Wine:<\/strong> Cabernet Sauvignon is one of the world\u2019s most popular red wines and one of the most widely grown varieties. \u00a0It comes from Bordeaux, France and was the result of the accidental crossing between Cabernet Franc and Sauvignon Blanc.\u00a0 Believe it or not, it\u2019s considered a fairly new variety, even though it has been around since the 17<sup>th<\/sup> century.<\/p>\n<p>This red grape varietal is known for its thick, durable skin, and the vine\u2019s resistance to the elements.\u00a0 Its hardiness is one of the reasons why it is grown in almost every single wine producing country around the world, including Argentina.\u00a0 The wine is deep red in colour with high to medium tannins. \u00a0Tannins are naturally occurring compounds that are found inside grape skins, seeds and stems.\u00a0 You can tell if the wine is high or low in tannins by how dry the inside of your mouth feels as you drink it (also known as mouth feel).\u00a0 Cabernet Sauvignon produces a full-bodied wine with medium acidity.<\/p>\n<p><strong>About the Region: <\/strong>Cabernet Sauvignon is the third most planted grape in Argentina. 77% of Cabernet Sauvignon vineyards are found in the high-altitude Mendoza region.\u00a0 Another 10% are found in the more desert-like conditions of San Juan in the northwestern region of Argentina.\u00a0 This is the nation\u2019s third-leading wine region.\u00a0 San Juan is much hotter and drier than the Mendoza region and temperatures can exceed 42 \u00a0Celsius in the summer.\u00a0 Even with these difficult conditions, the region produces some delicious wines.<\/p>\n<h3 id=\"our-picks\"><strong>Our Picks:<\/strong><\/h3>\n<h4 id=\"callia-alta-cabernet-sauvignon-2018\">Callia Alta Cabernet Sauvignon 2018<\/h4>\n<p>Callia Alta Cabernet Sauvignon is a carbon neutral wine.\u00a0 This hails from Tulum Valley in San Juan.\u00a0 It has mild, round tannins with a gentle mouth feel.\u00a0 The aromas are fresh and fruity with complex spiced notes.\u00a0 It is an easy-to-drink wine that is a great introduction to reds.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1600607\" src=\"https:\/\/divine.ca\/wp-content\/uploads\/2020\/08\/CalliaAltaCS.png\" alt=\"Cabernet Sauvignon: Callia\" width=\"211\" height=\"600\" \/><\/p>\n<p>Available at the <a href=\"https:\/\/www.lcbo.com\/webapp\/wcs\/stores\/servlet\/en\/lcbo\/callia-alta-cabernet-sauvignon-12454#.XyNPYShKjIU\" target=\"_blank\" rel=\"noopener\">LCBO<\/a> &#8211; $9.00 for a limited time<\/p>\n<h4 id=\"pairings\">Pairings:<\/h4>\n<ul>\n<li><strong>Cheese: <\/strong>Gruy\u00e8re\u2019s hint of fruitiness or a tangy Manchego go well with the complex spiced notes of this wine.<\/li>\n<li><strong>Mains:<\/strong> Earthy grilled portobello mushrooms are a great vegetarian main. A filet mignon or a gamey meat work well too.<\/li>\n<li><strong>Desserts: <\/strong>Unlike white wine, a Cabernet Sauvignon can hold its own with rich desserts. \u00a0Enjoy Callia Alta Cabernet Sauvignon with a rich chocolate mousse topped with almonds or a chocolate tart with raspberry coulis.<\/li>\n<\/ul>\n<h4 id=\"trapiche-reserve-cabernet-sauvignon-2019\">Trapiche Reserve Cabernet Sauvignon 2019<\/h4>\n<p>Trapiche, from the Mendoza region, is Argentina\u2019s number one export brand.\u00a0 It has the honour of being the recipient of the New World Winery of the Year in 2019 by Wine Enthusiast Magazine.\u00a0 This is a fresh clean wine with aromas of plums, red berries and a hint of licorice.\u00a0 There is also a hint of blackberry, chocolate and a toasted touch on the palate.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1600603\" src=\"https:\/\/divine.ca\/wp-content\/uploads\/2020\/08\/TRAPICHE-RESERVE-CABERNET-PILFER.jpg\" alt=\"Cabernet Sauvignon: Trapiche\" width=\"181\" height=\"600\" \/><\/p>\n<p>Available at the <a href=\"https:\/\/www.lcbo.com\/webapp\/wcs\/stores\/servlet\/en\/lcbo\/trapiche-reserve-cabernet-sauvignon-614669#.XyNQsChKjIU\" target=\"_blank\" rel=\"noopener\">LCBO<\/a> &#8211; $11.45 for a limited time<\/p>\n<h4 id=\"pairings-2\">Pairings:<\/h4>\n<ul>\n<li><strong>Cheese: <\/strong>A stronger tasting cheese like blue cheese or a sharp cheddar is the perfect pairing with this wine.<\/li>\n<li><strong>Mains:<\/strong> Rich meat like roast beef or duck are ideal. You can even enjoy a barbeque chicken with Trapiche Reserve Cabernet Sauvignon.<\/li>\n<li><strong>Desserts: <\/strong>A chocolate blackberry tarte will play nicely off of the flavours in this wine.<\/li>\n<\/ul>\n<h4 id=\"la-mascota-cabernet-sauvignon-2017\">La Mascota Cabernet Sauvignon 2017<\/h4>\n<p>This is another highly rated Argentine red having been awarded with 93 points (out of 100) by Tim Atkin, Master of Wine.\u00a0\u00a0 La Mascota Cabernet Sauvignon, from Maip\u00fa, Mendoza, \u00a0is a full-bodied, complex red with aromas of cassis, licorice and cherries with just a touch of spice.\u00a0 The wine was aged in French and American Oak for 12 months.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1600605\" src=\"https:\/\/divine.ca\/wp-content\/uploads\/2020\/08\/La-Mascota-cab-sauv-sin-cosecha.jpg\" alt=\"Cabernet Sauvignon: La Mascota\" width=\"183\" height=\"600\" \/><\/p>\n<p>Available at the <a href=\"https:\/\/www.lcbo.com\/webapp\/wcs\/stores\/servlet\/en\/lcbo\/la-mascota-cabernet-sauvignon-292110#.XyNSGShKjIU\" target=\"_blank\" rel=\"noopener\">LCBO<\/a> &#8211; $14.50 for a limited time<\/p>\n<h4 id=\"pairings-3\">Pairings:<\/h4>\n<ul>\n<li><strong>Cheese: <\/strong>The complex red is ideal with a strong cheese like Stilton.<\/li>\n<li><strong>Mains:<\/strong> Enjoy this full-bodied wine with grilled steak or a hearty beef stew. With steak, the rarer the meat, the bigger the tannins that it can take on.<\/li>\n<li><strong>Desserts: <\/strong>Go rich with a dark chocolate cake filled with ganache.
