The bitter greens salad is the second of three plant based recipes that Chef Matthew Ravenscroft of <a href=\"https:\/\/www.instagram.com\/rosalindarestaurant\/?hl=en\" target=\"_blank\" rel=\"noopener noreferrer\" data-saferedirecturl=\"https:\/\/www.google.com\/url?q=https:\/\/www.instagram.com\/rosalindarestaurant\/?hl%3Den&source=gmail&ust=1595173947004000&usg=AFQjCNHdrP6fwoc06sDTEL4utodbSQ7jHw\">Rosalinda<\/a> created with help from Bosch FarmFresh System and Thermador Freedom Induction Cooktop + Home Connect.\u00a0 Bitter greens aren\u2019t just flavourful, they are some of the nutritious vegetables around.\u00a0 Switch up this salad with whatever is in season so that you can enjoy it year round.<\/p>\n<p style=\"font-weight: 400;\">1\/2 head treviso<\/p>\n<p style=\"font-weight: 400;\">a few big leaves of black kale, thinly sliced<\/p>\n<p style=\"font-weight: 400;\">1\/2 bunch of watercress, rinsed well<\/p>\n<p style=\"font-weight: 400;\">(or really whatever salad greens you love!)<\/p>\n<p style=\"font-weight: 400;\">1\/2C cherry tomatoes, cut in half<\/p>\n<p style=\"font-weight: 400;\">2 cloves of garlic, sliced (or minced)<\/p>\n<p style=\"font-weight: 400;\">1 lemon<\/p>\n<p style=\"font-weight: 400;\">1\/4 head fennel<\/p>\n<p style=\"font-weight: 400;\">1\/2 zucchini, thinly sliced<\/p>\n<p style=\"font-weight: 400;\">4 leaves of mint, thinly sliced<\/p>\n<p style=\"font-weight: 400;\">4 leaves of basil, thinly sliced<\/p>\n<p style=\"font-weight: 400;\">1\/4C of pine nuts, toasted<\/p>\n<p style=\"font-weight: 400;\">balsamic<\/p>\n<p style=\"font-weight: 400;\">olive oil<\/p>\n<h3 id=\"directions\" style=\"font-weight: 400;\"><strong>Directions:<\/strong><\/h3>\n<ol>\n<li style=\"font-weight: 400;\">Chop greens into bite-sized pieces (I do different sized cuts for a nice texture and mouth-feel; some greens are heartier and need to be chopped finer); combine in a bowl with olive oil, lemon zest, juice + salt to your preference.<\/li>\n<li style=\"font-weight: 400;\">Set oven to 400f, slice fennel and toss in salt, olive oil + lemon juice; roast for 10 minutes until tender + caramelized; let cool in fridge while you prepare the rest.<\/li>\n<li style=\"font-weight: 400;\">For the\u00a0tomatoes, combine in a small bowl with lemon juice, salt, pepper, herbs + garlic. Should be garlic-y, but\u00a0bright, acidic and balanced with olive oil. Don\u2019t be afraid to rough them up a bit of let some of the juices come out.
