{"id":1599937,"date":"2020-07-06T20:48:05","date_gmt":"2020-07-07T00:48:05","guid":{"rendered":"https:\/\/divine.ca\/?p=1599937"},"modified":"2020-07-06T20:48:05","modified_gmt":"2020-07-07T00:48:05","slug":"recipe-the-acadia-burger","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/recipe-the-acadia-burger\/","title":{"rendered":"Recipe: The Acadia Burger"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">There are so many burger recipes out there, but sometimes the humble burger needs some love too.\u00a0 Dress it up with Chef Ryan McCaskey&#8217;s elevated toppings.\u00a0 They turn a burger into an experience.\u00a0 McCaskey is the Chef-Owner of Chicago&#8217;s <a href=\"https:\/\/acadiachicago.com\/\" target=\"_blank\" rel=\"noopener\">Acadia<\/a> restaurant.\u00a0 The Two Michelin Star restaurant featured progressive global cuisine, but the elevated comfort food is just plain good to us.<\/p>\n<h3 id=\"bacon-onion-jam\" style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Bacon Onion Jam<\/span><\/h3>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Yield: enough for approx. 6-8 8oz burgers<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">4 C. ground bacon<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">4 C. diced yellow onions<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1\/3 C. chopped garlic<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">2 C. apple cider<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 C. dark brown sugar<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 C. brewed coffee<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">\u00bd C. whole grain mustard<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">3 T. smoked paprika<\/span><\/p>\n<p><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Salt<\/span><\/p>\n<h3 id=\"directions\">Directions:<\/h3>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Sweat onions and garlic in a little oil. Add bacon. As the bacon releases some fat, skim off excess fat. After 15 or 20 minutes of cooking, add rest of ingredients. Cook on a low simmer until almost all of the liquid is cooked off and gone. It should be damp to the touch, but not overly wet or greasy. Reserve and keep warm.<\/span><\/p>\n<h3 id=\"bread-and-butter-pickles\" style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Bread and Butter Pickles<\/span><\/h3>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Per 10# of pickles<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">10# Kirby cucumbers, sliced<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 gal distilled vinegar<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 gal white wine vinegar<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">4 C. sugar<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">6 sliced yellow onions<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">2# dark brown sugar<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">2 T. chili flakes<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">3 T. whole allspice<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 C. celery seed<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">3 whole sliced yellow peppers<\/span><\/p>\n<h3 id=\"directions-2\">Directions:<\/h3>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Put all liquids, spices, and sugar into a pot. Boil and simmer for 15 min. Cool. Pour over rest of ingredients. Let sit at least 3 days in the refrigerator. Jar to keep longer. Or store in refrigerator up to a month.<\/span><\/p>\n<h3 id=\"truffle-cheese-mornay\" style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Truffle Cheese Mornay<\/span><\/h3>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 gal of whole milk<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">2 qts of shredded truffle fontina<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 T. truffle oil<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 # roux (equal parts flour and butter by weight)<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">\u00bd# melted butter<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Salt<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1\/2 onion<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">1 bay leaf<\/span><\/p>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">3 pieces cloves<\/span><\/p>\n<h3 id=\"directions-3\">Directions:<\/h3>\n<p style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Cut onion in half and char one side. Stick cloves in it. Make a slit in the onion and add bay leaf. Bring milk just to boil with onion pique. Once boiled, turn down to low simmer and add \u00bd of roux. Whisk in and cook till thickened. If still loose, add more roux. Add grated cheese. Melt. Add butter, truffle oil and salt to taste. Once emulsified, pass through a sieve or chinoise. Keep warm.<\/span><\/p>\n<h3 id=\"to-assemble\" style=\"line-height: 19.2pt; margin: 0cm 0cm 12.0pt 0cm;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">To Assemble:<\/span><\/h3>\n<p style=\"margin: 0cm; margin-bottom: .0001pt; line-height: 19.2pt;\"><span lang=\"EN-US\" style=\"font-size: 14.5pt; color: #1a1a1a;\">Cook your favorite 6-8 oz burger with a couple slices of gruyere cheese. Toast buttered brioche bun. On the bottom add warmed bacon jam, then pickles. Then burger with the cheese. Then a tablespoon or so of warmed mornay. Add <a href=\"https:\/\/divine.ca\/en\/pop-over-recipe-from-chef-john-shields-of-smyth-the-loyalist\/\">top bun<\/a>.
