{"id":1599839,"date":"2020-06-29T17:13:44","date_gmt":"2020-06-29T21:13:44","guid":{"rendered":"https:\/\/divine.ca\/?p=1599839"},"modified":"2020-06-29T18:21:04","modified_gmt":"2020-06-29T22:21:04","slug":"canada-day-recipe-maple-herbs-smoked-spatchcock-turkey","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/canada-day-recipe-maple-herbs-smoked-spatchcock-turkey\/","title":{"rendered":"Canada Day Recipe: Maple &#038; Herbs Smoked Spatchcock Turkey"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">Canada Day is right around the corner, and we found the perfect recipe to serve a big family or your bubble.\u00a0 Maple &amp; Herbs Smoked Spatchcock Turkey is THE dish you will want to celebrate Canada Day with.\u00a0 Who doesn&#8217;t love our national staple &#8211; <a href=\"https:\/\/divine.ca\/en\/ultimate-maple-whisky-beast-burger\/\">maple syrup<\/a>?\u00a0 Try cooking this recipe on a bbq or for the best flavour, use the <a href=\"https:\/\/biggreenegg.ca\/pages\/the-egg\" target=\"_blank\" rel=\"noopener\">Big Green Egg<\/a> &#8211;\u00a0 the best and most versatile kamado-style grill.\u00a0 Celebrate Canada&#8217;s birthday in a big way this year.<\/p>\n<p><strong>Serves:<\/strong> 12<\/p>\n<p><strong>Prep time:<\/strong> 20 minutes<\/p>\n<p><strong>Cooking Time:<\/strong> 2.5-3 hours<\/p>\n<h3 id=\"ingredients\"><strong>Ingredients:<\/strong><\/h3>\n<p><strong>\u00a0<\/strong><strong>For the BBQ Turkey Rub:<\/strong><\/p>\n<p>-\u00bd tsp cumin seed<\/p>\n<p>-1 tbsp paprika powder<\/p>\n<p>-1 tbsp fine sea salt<\/p>\n<p>-1 tbsp garlic powder<\/p>\n<p>-1 tbsp brown castor sugar<\/p>\n<p>-\u00bd tbsp onion powder<\/p>\n<p>-\u00bd tbsp dried thyme<\/p>\n<p>-\u00bd tbsp lime zest<\/p>\n<p>-1 tsp chilli flakes<\/p>\n<p>-\u00bd tsp cayenne pepper<\/p>\n<h4 id=\"for-the-herb-butter\"><strong>For the herb butter:<\/strong><\/h4>\n<p>-1 stick unsalted butter at room temperature<\/p>\n<p>-2 cloves of garlic, minced<\/p>\n<p>-1 tablespoon of fresh rosemary, chopped<\/p>\n<p>-1 tablespoon of fresh thyme, chopped<\/p>\n<p>-1 teaspoon of Kosher salt<\/p>\n<p>-1 14-16 pounds <a href=\"https:\/\/www.canadianturkey.ca\/\" target=\"_blank\" rel=\"noopener\">whole turkey<\/a><\/p>\n<p>-1 cup of maple syrup<\/p>\n<h3 id=\"directions\"><strong>Directions:<\/strong><\/h3>\n<ol>\n<li><strong>Set the Big Green Egg<\/strong> for indirect cooking with the <a href=\"https:\/\/biggreenegg.ca\/products\/conveggtor\" target=\"_blank\" rel=\"noopener\">convEGGtor<\/a> at 300\u00b0F\u00a0and one <a href=\"https:\/\/biggreenegg.ca\/products\/smoking-chunks\" target=\"_blank\" rel=\"noopener\">apple wood chunk<\/a> on the charcoal.<\/li>\n<li><strong>Make the dry rub.<\/strong> Finely crush the cumin seeds in a mortar and mix thoroughly with the other rub ingredients.<\/li>\n<li><strong>Mix the herb butter:<\/strong>In a small bowl, mix together the softened butter, garlic, rosemary, thyme and Kosher salt. Set aside.<\/li>\n<li><strong>Spatchcock the Turkey: <\/strong>Remove the backbone by using <a href=\"https:\/\/biggreenegg.ca\/products\/kitchen-shears\" target=\"_blank\" rel=\"noopener\">kitchen shears<\/a> or a good knife. Snip along each side of the turkey\u2019s spine, until it\u2019s completely detached. Once you remove the backbone, open up the bird, flip it over and push the palm of your hand to flatten it out as much as possible.<\/li>\n<li><strong>Butter and rub:<\/strong> Use your hands to spread the herb butter all over the turkey, between its skin &amp; meat. Sprinkle a generous coating of the dry rub on both sides of the turkey, starting with the skin down.<\/li>\n<li><strong>Smoke the Turkey<\/strong>: Place the turkey with breasts facing up and centered on the grill. Brush maple syrup all over the outsides of the turkey every 30 minutes. Cook until internal temperature of the breasts reaches 165\u00b0F and thighs about 170\u00b0 This will take about 2h30 to 3 hours.<\/li>\n<li><strong>Rest the Turkey. <\/strong>Remove from the BGE and rest at room temperature for 30 minutes before carving.
