{"id":1594308,"date":"2020-03-30T17:51:09","date_gmt":"2020-03-30T21:51:09","guid":{"rendered":"https:\/\/divine.ca\/?p=1594308"},"modified":"2020-04-09T14:29:56","modified_gmt":"2020-04-09T18:29:56","slug":"meatless-monday-one-bite-falafel-kebabs","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/meatless-monday-one-bite-falafel-kebabs\/","title":{"rendered":"Meatless Monday: One Bite Falafel Kebabs"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">Falafel kebabs are perfect as a light lunch, appetizer or even snack!\u00a0 We love the Middle Eastern flavours and how easy they are to prepare.\u00a0 If you don&#8217;t have all of the ingredients, play around.\u00a0 For example, you can use cilantro instead of dill or you can replace the tomato with red pepper.\u00a0 Shop your fridge &#8211; remember, you can cook to taste, but baking is more exact.\u00a0 Enjoy this on your next <a href=\"https:\/\/divine.ca\/en\/meatless-monday-one-skillet-lasagna\/\">Meatless Monday<\/a>!<\/p>\n<p><strong>Serv<\/strong><strong>ing<\/strong><strong>: 16 kebabs<\/strong><\/p>\n<p><strong>Prep time: 10 minutes<\/strong><\/p>\n<p><strong>Cook time: 15 minutes<\/strong><\/p>\n<p><strong>Total time: 25 minutes<\/strong><\/p>\n<h3 id=\"ingredients\"><strong>Ingredients <\/strong><\/h3>\n<p>1 pkg <a href=\"http:\/\/yvesveggie.com\/en\/products\/appetizers\/\" target=\"_blank\" rel=\"noopener\">Yves Falafel Balls<\/a><\/p>\n<p>2 baby cucumber<\/p>\n<p>16 cherry tomatoes<\/p>\n<p>4 dill pickles, cut into 4 pieces each<\/p>\n<p>16 fancy toothpicks<\/p>\n<p><strong>Tahini Dipping sauce <\/strong><\/p>\n<p>\u00bc cup (60 mL) tahini<\/p>\n<p>\u00bd cup (125 mL) plain kefir<\/p>\n<p>2tbsp. (30 mL) lemon juice<\/p>\n<p>1 tsp. (5 mL) lemon zest<\/p>\n<p>\u00bc cup (60 mL) chopped fresh dill<\/p>\n<p>Salt to taste<\/p>\n<h3 id=\"directions\"><strong>Directions <\/strong><\/h3>\n<ul>\n<li>Prepare falafel according to package directions.<\/li>\n<li>Peel cucumbers lengthwise into long ribbons; set aside.<\/li>\n<li>Tahini dipping sauce: In a small bowl mix together tahini, kefir, lemon juice, lemon zest, dill and salt; set aside.<\/li>\n<li>Gently skewer 1 falafel on the toothpick and push to the top of the toothpick. Follow falafel with 1-2 cucumber ribbons, followed with one cherry tomato and one pickle round.
