{"id":1588294,"date":"2018-04-21T00:00:00","date_gmt":"2018-04-21T04:00:00","guid":{"rendered":"https:\/\/divine.ca\/?p=1588294"},"modified":"2020-04-10T18:27:23","modified_gmt":"2020-04-10T22:27:23","slug":"recipe-grilled-watermelon-kale-salad","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/recipe-grilled-watermelon-kale-salad\/","title":{"rendered":"Recipe: Grilled Watermelon &#038; Kale Salad"},"content":{"rendered":"<p>The <a href=\"https:\/\/divine.ca\/en\/recipe-korean-bbq-pork-lettuce-wraps-with-watermelon-salad\/\">sweet and smoky grilled watermelon<\/a> is a great balance to the nutrient-dense and bitter dinosaur kale.<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<ul>\n<li class=\"textbox\" dir=\"ltr\">1 small seedless watermelon, cut into 1-inch thick wedges<\/li>\n<li class=\"textbox\" dir=\"ltr\">Olive oil<\/li>\n<li class=\"textbox\" dir=\"ltr\">Kosher salt<\/li>\n<li class=\"textbox\" dir=\"ltr\">Freshly ground black pepper<\/li>\n<li class=\"textbox\" dir=\"ltr\">1 bunch dinosaur kale*<\/li>\n<li class=\"textbox\" dir=\"ltr\">2 cups (500 mL) baby kale<\/li>\n<li class=\"textbox\" dir=\"ltr\">6 oz (170 g) goat cheese, crumbled<\/li>\n<li class=\"textbox\" dir=\"ltr\">1\/2 cup (125 mL) slivered toasted almonds<\/li>\n<\/ul>\n<h4 id=\"for-the-dressing\">For the Dressing<\/h4>\n<ul>\n<li class=\"textbox\" dir=\"ltr\">1\/2 cup (125 mL) olive oil<\/li>\n<li class=\"textbox\" dir=\"ltr\">1\/4 cup (60 mL) balsamic vinegar<\/li>\n<li class=\"textbox\" dir=\"ltr\">1 garlic clove, crushed<\/li>\n<li class=\"textbox\" dir=\"ltr\">1 tablespoon (15 mL) honey<\/li>\n<li class=\"textbox\" dir=\"ltr\">Kosher salt<\/li>\n<li class=\"textbox\" dir=\"ltr\">Freshly ground black pepper<\/li>\n<\/ul>\n<h3 id=\"instructions\" class=\"textbox\" dir=\"ltr\"><strong>Instructions<\/strong><\/h3>\n<ol>\n<li class=\"textbox\" dir=\"ltr\">Preheat your grill to high. Brush the watermelon with olive oil and season with salt and pepper on both sides. Grill each side for 2 to 3 minutes, or until you have nice grill marks. Transfer the watermelon to a large plate and set a side.<\/li>\n<li class=\"textbox\" dir=\"ltr\">Remove the stems from the dinosaur kale and cut the kale into thin strips (julienne). Massage the kale gently which helps to make it less bitter.Place in a large bowl and add the baby kale. Top with the crumbled goat cheese and the slivered almonds.<\/li>\n<li class=\"textbox\" dir=\"ltr\">Whisk the olive oil, balsamic vinegar, garlic and honey together in a liquid measuring cup until well combined. Season with salt and pepper, to taste.
