The chia and watermelon make a jam-like layer that compliments the creaminess of yogurt. Filled with protein and healthy fats from the chia seeds, this parfait is perfect for breakfast or <a href=\"https:\/\/divine.ca\/en\/recipe-strawberry-watermelon-shortcake\/\">mid-afternoon snack<\/a> and will give you a lasting energy boost!<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<ul>\n<li class=\"textbox\" dir=\"ltr\">4 cups (1L) watermelon, liquefied<\/li>\n<li class=\"textbox\" dir=\"ltr\">\u00bd cup (125 mL) chia seeds<\/li>\n<li class=\"textbox\" dir=\"ltr\">2 tablespoons (30 mL) lemon juice<\/li>\n<li class=\"textbox\" dir=\"ltr\">Yogurt of choice<\/li>\n<li class=\"textbox\" dir=\"ltr\">Toppings of choice: berries, mango, kiwi, mint, toasted coconut, chia seeds<\/li>\n<\/ul>\n<h3 id=\"directions\" class=\"textbox\" dir=\"ltr\">Directions<\/h3>\n<ol>\n<li class=\"textbox\" dir=\"ltr\">Begin by making a watermelon chia jam. To make the jam, combine watermelon, chia and lemon juice in a medium bowl and stir. Let sit in the refrigerator for at least 4 hours or overnight, or until thick with a jam-like consistency.<\/li>\n<li class=\"textbox\" dir=\"ltr\">In a small jar, layer 1 to 2 tablespoons of yogurt and 1 to 2 tablespoons of watermelon chia pudding. Repeat layers 2 to 3 more times depending on the size of your jar.
