And by SAD I mean Seasonal Affective Disorder. The winter seems to linger longer than it should.\u00a0 In other words we all need some good ol&#8217; SUNSHINE! Well, I may not be able to bring you sunshine; I can make you feel all warm and cozy with my <a href=\"https:\/\/vivaciousgourmet.com\/\" target=\"_blank\" rel=\"noopener\">Easy Peasy Veggie Minestrone Soup<\/a>.\u00a0 There are many versions of this <a href=\"https:\/\/divine.ca\/en\/recipe-summer-pea-and-mint-soup\/\">soup<\/a> originating from Italy.\u00a0\u00a0 I like to load mine up with tons of vegetables, rice and beans for protein.\u00a0 Anytime I feel cold or worn down, I fill up on this medicine and it is the ray of light I need!<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<ul>\n<li>1 medium onion<\/li>\n<li>2 celery stalks chopped<\/li>\n<li>3 medium carrots chopped<\/li>\n<li>2 cloves garlic<\/li>\n<li>12 cups Veggie Stock<\/li>\n<li>2 medium potatoes chopped<\/li>\n<li>1 can of pinto beans (or cannellini beans) drained<\/li>\n<li>4 small tomatoes chopped<\/li>\n<li>1 \u00bd tbsp. tomato paste<\/li>\n<li>2 bay leaves<\/li>\n<li>\u00bd small cabbage shredded<\/li>\n<li>2 medium zucchini chopped<\/li>\n<li>\u00bd cup Arborio rice<\/li>\n<li>2 tsp of freshly ground black pepper<\/li>\n<li>1 tsp of salt<\/li>\n<\/ul>\n<h3 id=\"directions\">Directions<\/h3>\n<ol>\n<li>Heat oil in a large pot and cook onions and garlic until they soften.<\/li>\n<li>Add veggie stock, carrots, celery, beans, tomatoes, tomato paste, potatoes , bay leaves and bring to a boil.<\/li>\n<li>Reduce heat, add in salt and pepper, simmer and keep covered for 20 minutes.<\/li>\n<li>Add Zucchini, cabbage, rice and simmer uncovered for about 15-18 minutes or until rice is cooked through.
