{"id":1588213,"date":"2018-04-13T00:00:00","date_gmt":"2018-04-13T04:00:00","guid":{"rendered":"https:\/\/divine.ca\/?p=1588213"},"modified":"2020-09-10T23:46:40","modified_gmt":"2020-09-11T03:46:40","slug":"recipe-lemon-roasted-halibut-with-quinoa-and-spring-vegetables","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/recipe-lemon-roasted-halibut-with-quinoa-and-spring-vegetables\/","title":{"rendered":"Recipe: Lemon Roasted Halibut with Quinoa and Spring Vegetables"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">If you are looking for a fish dish that&#8217;s easy and delicious &#8211; look no further!\u00a0 We are fish and <a href=\"https:\/\/divine.ca\/en\/recipe-garlic-herb-shrimp-and-pesto-crostini\/\">seafood<\/a> lovers and this recipe is fresh and in season right now.<\/p>\n<p>6 servings<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<ul>\n<li>2 cups yellow quinoa<\/li>\n<li>1 bunch asparagus, cut into 6 pieces on the bias<\/li>\n<li>4 cups sugar snap peas, cut into 4 pieces on the bias<\/li>\n<li>2 cups shelled green sweet peas<\/li>\n<li>1\/2 lemon, zest and juice<\/li>\n<li>1\/4 bunch chives, finely chopped<\/li>\n<li>1\/4 bunch tarragon, finely chopped<\/li>\n<li>3 oz. extra virgin olive oil<\/li>\n<li>6 (5) oz halibut filets<\/li>\n<li>2 sprigs fresh dill<\/li>\n<li>2 lemons, thinly sliced<\/li>\n<li>1\/4 lb unsalted butter<\/li>\n<li>1\/4 cup white wine<\/li>\n<li>1 cup toasted chopped almonds<\/li>\n<li>Salt and pepper, as needed<\/li>\n<\/ul>\n<h3 id=\"directions\">Directions<\/h3>\n<ol>\n<li>Preheat oven to 375\u00b0F.<\/li>\n<li>Rinse quinoa thoroughly and place into a rice cooker with 3 cups of water; Cook until done.<\/li>\n<li>Meanwhile, bring a large pot of salted water to a boil and prepare a large bowl with ice water nearby. Blanch asparagus, snap peas and sweet peas by placing them into the boiling water for about 1 minute. Strain and remove to ice water for another minute to stop the cooking. Drain well and set aside.<\/li>\n<li>Remove quinoa from rice cooker, place into a large bowl and mix together with lemon zest, chives, tarragon and olive oil. Season to taste with salt &amp; pepper Season fish with salt and pepper and place onto a parchment-lined sheet tray. Place a sprig of dill onto each piece of fish; layer each with 3-4 lemon slices and top with 1 tsp. butter. Splash with white wine and cook uncovered approximately 7 minutes.<\/li>\n<li>While the fish is cooking, brown the remaining butter in a pan over medium high heat. Add the remaining lemon juice and blanched vegetables and toss quickly.
