{"id":1588211,"date":"2018-04-30T00:00:00","date_gmt":"2018-04-30T04:00:00","guid":{"rendered":"https:\/\/divine.ca\/?p=1588211"},"modified":"2020-04-09T15:53:16","modified_gmt":"2020-04-09T19:53:16","slug":"recipe-roasted-zucchini-with-almonds-and-olives","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/recipe-roasted-zucchini-with-almonds-and-olives\/","title":{"rendered":"Recipe: Roasted Zucchini with Almonds and Olives"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p class=\"pk-dropcap pk-dropcap-borders\">Summer squash tastes great when it is grilled or roasted in the oven.\u00a0 This recipe for roasted <a href=\"https:\/\/divine.ca\/en\/greek-stuffed-zucchini\/\">zucchini<\/a> with almonds an olives is perfect as a side dish for your summer guests.<\/p>\n<p>4 servings<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<ul>\n<li>3 small zucchini, sliced thin<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>2 tablespoons green olives, chopped roughly<\/li>\n<li>1\/4 cup almonds, chopped roughly<\/li>\n<li>2 tablespoons fresh basil, chopped roughly<\/li>\n<\/ul>\n<h3 id=\"instructions\">Instructions<\/h3>\n<ol>\n<li>Preheat oven to 400\u00b0F.<\/li>\n<li>Using a vegetable peeler, slice zucchini lengthwise into long, thin strips and put in a medium-sized bowl.<\/li>\n<li>Add salt and allow zucchini to sit for 5 minutes.<\/li>\n<li>Add all remaining ingredients and toss lightly.<\/li>\n<li>Arrange in a single layer in an ungreased baking sheet and bake for 20 minutes.<\/li>\n<li>Serve as a side dish or atop pasta with marinara sauce.
