{"id":1588176,"date":"2018-08-07T00:00:00","date_gmt":"2018-08-07T04:00:00","guid":{"rendered":"https:\/\/divine.ca\/?p=1588176"},"modified":"2020-09-10T23:26:51","modified_gmt":"2020-09-11T03:26:51","slug":"recipe-fruity-rice-pilaf-and-grilled-chicken-skewers","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/recipe-fruity-rice-pilaf-and-grilled-chicken-skewers\/","title":{"rendered":"Recipe: Fruity Rice Pilaf and Grilled Chicken Skewers"},"content":{"rendered":"<p class=\"p1 pk-dropcap pk-dropcap-borders\">Chicken skewers are perfect any time of year.\u00a0 The fruity rice pilaf is a delicious side dish that gives the light dish some richness and a Moroccan flavour.\u00a0 This is an easy dish to make for a small dinner party or if you want something different for your family dinner.<\/p>\n<p><strong>4 servings<\/strong><\/p>\n<h3 id=\"ingredients\"><strong>Ingredients<\/strong>:<\/h3>\n<p><a href=\"https:\/\/divine.ca\/en\/chicken-marinade\/\"><em>Chicken Skewers<\/em><\/a>:<\/p>\n<ul>\n<li>2 \u00a0large chicken breasts, skinned and cut into bite-sized pieces<\/li>\n<li>1\/2 cup (1125 mL) plain yogurt<\/li>\n<li>1 Tbsp. (15 mL) turmeric<\/li>\n<li>1\/2 tsp. (2.5 mL) chili powder<\/li>\n<li>juice of 1 lemon<\/li>\n<li>4 \u00a0metal skewers, at least 8 inches long<\/li>\n<\/ul>\n<p><em>Rice Pilaf:<\/em><\/p>\n<ul>\n<li>2 Tbsp. (30mL) butter<\/li>\n<li>1 medium onion, peeled, and finely chopped<\/li>\n<li>1 tsp. (5 mL) ground coriander<\/li>\n<li>1 tsp. (5 mL) ground cumin<\/li>\n<li>1 cup (250 mL) white or brown basmati rice<\/li>\n<li>2 cups (500mL) chicken stock<\/li>\n<li>6 prunes, roughly chopped<\/li>\n<li>2\/3 cup (160 mL) shelled pistachio nuts, roughly chopped<\/li>\n<li>2 Tbsp. (30mL) fresh coriander, finely chopped<\/li>\n<li>2 Tbsp. (30mL) fresh parsley, finely chopped<\/li>\n<li>salt &amp; pepper, to taste<\/li>\n<\/ul>\n<h3 id=\"directions\"><strong>Directions:<\/strong><\/h3>\n<p>1.To prepare chicken skewers: In a small bowl, combine yogurt, turmeric, chili powder and lemon juice.<\/p>\n<p>2. Divide chicken pieces equally and place on skewers. \u00a0Set skewers in a wide dish and cover with marinade. Set aside.<\/p>\n<p>3. To prepare the pilaf: In a large saucepan, melt butter over low heat, add onion and saute until soft \u2013about 5 min. Add ground coriander and ground cumin, stirring well to avoid sticking.<\/p>\n<p>4. Add rice, and saute for about 1 min. before adding stock. Stir well, bring to a boil, then reduce heat to low and cover with a tight-fitting lid. Leave to cook over the heat. Cook for 10 min.then let sit for 2 to 3 more mins.<\/p>\n<p>5. On hot oiled grill, place chicken skewers turning every 2 to 3 mins, for a total of 8 minutes or until the chicken is cooked through. Remove from grill and set aside.<\/p>\n<p>6. Add prunes, pistachio nuts and fresh herbs to rice and mix well.<\/p>\n<p>7.
