My delicious Quinoa Pizza Bites are gluten free and vegetarian so they are very easy to digest. Quinoa is an excellent source of a complete plant protein. \u00a0This means it provides you with all the nine essential amino acids.\u00a0 These pizza bites are a great snack for the big game or on the go without the guilt. So go on, and eat one more.<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<ul>\n<li>1\/2 cup of uncooked quinoa \u00a0(2 cups cooked)<\/li>\n<li>\u00bd tsp \u00a0of olive oil<\/li>\n<li>3\/4 cup of marinara sauce (1\/2 cup for dipping)<\/li>\n<li>1 egg<\/li>\n<li>1 cup of shredded mozzarella (1\/2 use in mixture and \u00bd used on top)<\/li>\n<li>1cup of small peperoni (optional)<\/li>\n<li>1 tsp of garlic powder<\/li>\n<li>2 tsp of Italian seasoning<\/li>\n<li>1 tsp of oregano<\/li>\n<li>2 tsp of hot sauce (optional)<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>Fresh \u00a0chopped basil for garnish<\/li>\n<\/ul>\n<h3 id=\"directions\">Directions<\/h3>\n<ol>\n<li>Preheat oven to 400 degrees.<\/li>\n<li>Toast quinoa in a heated pan with olive oil for 5 mins. Keep stirring as not to burn. This gives the quinoa a nuttiness flavour.<\/li>\n<li>Fill a pot with 1 cup of water and a dash of salt. Add in your toasted quinoa. Cook covered for about 15 minutes or until water is absorbed. \u00a0Fluff with fork.<\/li>\n<li>In a large bowl, mix quinoa, the egg, \u00bc cup marinara sauce, \u00bd \u00a0mozzarella cheese, peperoni&#8217;s, garlic powder, Italian seasoning, oregano and hot sauce. \u00a0Add salt and pepper to taste.<\/li>\n<li>Fill mixture in a greased 12 muffin tin pan or 9 x 3 baking pan (you can also use parchment paper for easy cleanup)<\/li>\n<li>Place 1-2 spoonful in each muffin tin and pack tightly.<\/li>\n<li>Bake in oven for 10 minutes. Remove from the oven. \u00a0Add remaining \u00bd cup cheese on top of mixture.<\/li>\n<li>Place in oven under Low-broil for additional 4-5 minutes. \u00a0Keep an eye as not to burn.<\/li>\n<li>Remove from oven and let sit for about 10 minutes.
