{"id":1588058,"date":"2018-01-10T00:00:00","date_gmt":"2018-01-10T05:00:00","guid":{"rendered":"https:\/\/divine.ca\/?p=1588058"},"modified":"2020-09-12T12:14:26","modified_gmt":"2020-09-12T16:14:26","slug":"recipe-spaghetti-cacio-e-pepe-with-fava-beans","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/recipe-spaghetti-cacio-e-pepe-with-fava-beans\/","title":{"rendered":"Recipe: Spaghetti \u2018Cacio e Pepe\u2019 With Fava Beans"},"content":{"rendered":"<p class=\"p1 pk-dropcap pk-dropcap-borders\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1524343\" src=\"https:\/\/divine.ca\/2018\/01\/cacio-internal.jpg\" alt=\"\" width=\"869\" height=\"585\" \/>Cacio e Pepe is typically a dish with only four ingredients &#8211; pasta, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Pecorino\" target=\"_blank\" rel=\"noopener\">pecorino<\/a>, salt and pepper.\u00a0 This recipe elevates the classic Italian dish and adds a different flavour.\u00a0 You can keep the recipes simple by not adding the fava beans or edamame.\u00a0 Enjoy this pasta dish for your next <a href=\"https:\/\/divine.ca\/en\/recipe-versace-mushroom-mac-cheese\/\">Meatless Monday<\/a>.<\/p>\n<p>Level: Medium<\/p>\n<p>Serves: 4 people<\/p>\n<p>Time: 40 mins<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<p>Fava or Edamame Cream<\/p>\n<p>7 ounces (200 g) 1\u00bc cups frozen blanched shelled fava beans or edamame, defrosted<\/p>\n<p>1 tablespoon (15 ml) extra virgin olive oil<\/p>\n<p>2 scallions, white and green parts sliced<\/p>\n<p>\u00bc teaspoon (1 g) salt<\/p>\n<p>\u215b teaspoon (.5 g) pepper<\/p>\n<p>6 fresh mint leaves<\/p>\n<p><strong>Cacio e Pepe<\/strong><\/p>\n<p>1 teaspoon (4 g) coarse sea salt<\/p>\n<p>8 ounces (225 g) thick spaghetti<\/p>\n<p>2 teaspoons (10 ml) extra virgin olive oil<\/p>\n<p>2 tablespoons (30 g) unsalted butter<\/p>\n<p>Freshly ground coarse black pepper<\/p>\n<p>4 ounces (115 g) 1\u00bd cups grated Pecorino Romano PDO<\/p>\n<h3 id=\"directions\">Directions<\/h3>\n<p>1.Squeeze beans out of their skins. Heat oil in a two-quart (2l) sauce pan over medium. Add green onion; cook three minutes until wilted. Add beans, 1\u00bd cups (360 ml) water, salt, pepper, and mint. Simmer for six minutes. Puree with an immersion blender until smooth. Pass through a sieve. Spoon into four shallow pasta bowls and keep warm.<\/p>\n<p>2.Put two quarts (2 l) of water into a large high-sided saut\u00e9 pan.Bring to the boil and add coarse salt. Add pasta and cook for two minutes less than the package instructions say.<\/p>\n<p>3.Meanwhile, set another saut\u00e9 pan on a burner next to the one where the pasta is cooking. Add olive oil, butter, and lots of freshly ground black pepper. Melt over medium heat until the butter turns golden brown. As soon as it does, remove from the heat and add about \u00bc cup (60 ml) of pasta cooking water to stop the browning. Keep warm but off the heat.<\/p>\n<p>4. When the pasta is done, transfer it with tongs to the pan with the butter. Add another \u00bc cup (60 ml) of pasta cooking water and cook over medium high for two minutes, adding more pasta water if the pan gets dry. At the end of the two minutes there should be just a little bit of moisture in the pan.<\/p>\n<p>5.Remove pan from the heat and gradually sprinkle in the Pecorino Romano PDO, stirring vigorously. If the pasta starts getting dry, add a little more pasta water. After adding about two thirds of the cheese, the sauce should be creamy.<\/p>\n<p>6. Serve spaghetti on top of the fava\/edamame cream.
