Lynn Crawford created this <a href=\"https:\/\/divine.ca\/en\/meatless-mondays-breakfast-burger\/\">vegetarian recipe<\/a> for leek, lemon and feta quiche.\u00a0 It follows one of the most important tips for making the perfect quiche &#8211; less is more.\u00a0 Eggs are the star of the dish &#8211; let them shine and enjoy this at brunch, lunch or dinner.<\/p>\n<p><strong>Makes\u00a01 large quiche (6 servings)<\/strong><\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<p>1 sheet frozen puff pastry<\/p>\n<p>2 tbsp (30 mL) extra-virgin olive oil<\/p>\n<p>2 cups (500 mL) cleaned and diced leeks<\/p>\n<p>1 cup (250 mL) heavy cream<\/p>\n<p>4 eggs<\/p>\n<p>1 tsp (5 mL) grated lemon zest<\/p>\n<p>1 tsp (5 mL) kosher salt<\/p>\n<p>\u00bc tsp freshly ground black pepper<\/p>\n<p>3 ounces (90 g) feta cheese, crumbled<\/p>\n<h3 id=\"directions\">Directions:<\/h3>\n<p>Thaw puff pastry according to package directions.<\/p>\n<p>Preheat oven to 375\u2070F (190\u2070C).<\/p>\n<p>Heat olive oil in a large skillet over medium heat. Add leeks and cook until they are wilted, about 5-7 minutes, then reserve.<\/p>\n<p>In a mixing bowl, whisk together cream, eggs, lemon zest, salt and pepper.<\/p>\n<p>On a lightly floured surface, or between two layers of plastic wrap or parchment paper, roll out the thawed puff pastry to a thickness of about 1\/4 inch (5 mm). Line a shallow 9\u201d (23 cm) pie plate and press the pastry up the sides to make a nice edge.<\/p>\n<p>Distribute leeks evenly across the bottom of the dish. Pour the cream mixture over leeks.
