1 package (142 g\/5 oz) fresh arugula or mixed greens<\/p>\n

1 cup (250 mL) sliced fresh strawberries<\/p>\n

10 to 12 California prunes, quartered<\/p>\n

\u00bc cup (50 mL) pepitas<\/p>\n

VINAIGRETTE<\/h3>\n

1 large clove of garlic, minced<\/p>\n

1 Tbsp. (15 mL) Dijon-style mustard<\/p>\n

1 tsp. (5 mL) granulated sugar<\/p>\n

\u00bd tsp. (2.5 mL) dried basil or tarragon<\/p>\n

\u00bc cup (50 mL) rice or white wine vinegar<\/p>\n

\u00bd cup (125 mL) olive or sunflower oil<\/p>\n

salt and pepper<\/p>\n

Makes 4 servings<\/em><\/p>\n

DIRECTIONS<\/h3>\n

  1. In a medium bowl, combine salad ingredients. Set aside.<\/li>\n
  2. In a small bowl, combine all of the vinaigrette ingredients, except for the oil.<\/li>\n
  3. Whisk oil into\u00a0the vinaigrette. Add salt and pepper to taste.<\/li>\n
  4. Drizzle salad with vinaigrette, toss to coat and serve.<\/li>\n<\/ol>\n
