{"id":1587961,"date":"2017-11-07T00:00:00","date_gmt":"2017-11-07T05:00:00","guid":{"rendered":"https:\/\/divine.ca\/?p=1587961"},"modified":"2020-09-11T15:20:05","modified_gmt":"2020-09-11T19:20:05","slug":"butternut-squash-almond-gratin-recipe","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/butternut-squash-almond-gratin-recipe\/","title":{"rendered":"Butternut Squash Almond Gratin Recipe"},"content":{"rendered":"<p class=\"p1\"><a href=\"https:\/\/divine.ca\/en\/meatless-mondays-curry-chickpea-patty-with-sliced-butternut-squash\/\">Butternut squash<\/a> is a fall favourite.\u00a0 This almond gratin side dish is perfect for a Thanksgiving dinner.\u00a0 It&#8217;s lighter than traditional gratin recipes, but you won&#8217;t miss the extra calories.\u00a0 If you do not like spicy food, leave out the hot sauce.<\/p>\n<h3 id=\"ingredients\" class=\"p1\"><strong>Ingredients:\u00a0<\/strong><\/h3>\n<div class=\"field-items\">\n<div class=\"field-item even\">1 butternut squash (2 &#8211; 2\u00a01\/2 lbs.)<\/div>\n<div class=\"field-item odd\">1\/2 cup lowfat milk<\/div>\n<div class=\"field-item even\">Salt and pepper<\/div>\n<div class=\"field-item odd\">3 Tbs. butter<\/div>\n<div class=\"field-item even\">2\/3 cup slivered almonds<\/div>\n<div class=\"field-item odd\">1\/3 cup sliced green onions<\/div>\n<div class=\"field-item even\">1\/4 to\u00a01\/2 tsp. hot pepper sauce<\/div>\n<div class=\"field-item odd\">2\/3 cup unseasoned dry bread crumbs<\/div>\n<div class=\"field-item even\">1 tsp. dried thyme<\/div>\n<\/div>\n<h3 id=\"preparation\"><strong>Preparation:<\/strong><\/h3>\n<p>Heat oven to 375 degrees.<\/p>\n<p>Halve squash vertically and remove seeds. Place cut sides down in shallow baking dish; add 1\/4 inch water. Cover with aluminum foil. Bake about 45 minutes until thickest part of squash is just tender when pierced with pick.<\/p>\n<p>Scoop pulp from skin into bowl and break up into small chunks; mash lightly with back of spoon. Mix in milk and season with salt and pepper.<\/p>\n<p>Spoon an even layer in shallow 1 1\/2-quart baking dish. Meanwhile, melt butter in nonstick skillet over medium heat; add almonds. Cook and stir, 3 to 4 minutes, until almonds are lightly browned. Mix in onions and pepper sauce; cook 1 minute. Mix in bread crumbs and thyme. Cook and stir 2 minutes.
