The addition of pureed black rice enhances the texture, which is perfectly complemented by a blueberry coulis, a dollop of whipped cream, fresh berries and some crunchy sesame snaps. An easy, impressive, delicious and <a href=\"https:\/\/divine.ca\/en\/cherry-almond-fudge\/\">gluten-free<\/a> dessert to try!<\/p>\n<h3 id=\"ingredients\">Ingredients:<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1507917\" src=\"https:\/\/divine.ca\/2017\/09\/Panna-Cotta-internal-1.jpg\" alt=\"\" width=\"869\" height=\"585\" \/>1\u00bd cup (375 mL)\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0Black Rice<\/p>\n<p>1 can (400 mL) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 light coconut milk<\/p>\n<p>\u00bd cup (125 mL) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 granulated sugar<\/p>\n<p>2 tbsp (30 mL) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 gelatin<\/p>\n<p>1\u00bd cups (375 mL) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 35% whipping cream, divided<\/p>\n<p><strong>Blueberry Coulis:<\/strong><\/p>\n<p>1 cup (250 mL) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 blueberries<\/p>\n<p>\u00bc cup (60 mL)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 sugar<\/p>\n<p>\u00bc cup (60 mL) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 lemon juice<\/p>\n<p><strong>Garnish:<\/strong><\/p>\n<p>Fresh berries<\/p>\n<p>1 package (27 g) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 sesame snaps, crushed<\/p>\n<h3 id=\"directions\">Directions:<\/h3>\n<p>In a small saucepan, combine 1\u00bd cups (375 mL) water, rice, coconut milk and sugar. Bring to a boil; cover and reduce to simmer for 1 hour until rice grains have split. Mixture will be soupy.<\/p>\n<p>Meanwhile, sprinkle gelatin evenly over \u00bd cup (125 mL) water in a wide shallow bowl; let sit 5-10 minutes then stir into cooked rice.<\/p>\n<p>Pour hot rice mixture into a high-speed blender and blend to a fine pur\u00e9e. Strain through a sieve into a large bowl; working thickened mixture through with a rubber spatula.<\/p>\n<p>Whip cream to firm peaks, remove and set aside 1 cup for serving. Fold remaining cream gently into rice pur\u00e9e. Pour about \u00bd cup (125 mL) portions into 8 jars or glasses and chill for 4 hours or overnight.<\/p>\n<p>For the blueberry coulis, simmer blueberries, sugar and lemon juice in a small saucepan breaking up berries into a sauce; about 8-10 minutes.
