{"id":1581898,"date":"2020-03-02T22:03:43","date_gmt":"2020-03-03T03:03:43","guid":{"rendered":"https:\/\/divine.ca\/?p=1581898"},"modified":"2020-04-09T14:30:18","modified_gmt":"2020-04-09T18:30:18","slug":"meatless-mondays-egg-and-spinach-hand-pies","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/meatless-mondays-egg-and-spinach-hand-pies\/","title":{"rendered":"Meatless Mondays: Egg and Spinach Hand Pies"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">Egg and spinach hand pies look impressive, but our time saving trick is to use ready made puff pastry.\u00a0 The hand pies are delicious for breakfast, a <a href=\"https:\/\/divine.ca\/en\/meatless-mondays-collard-green-falafel-rainbow-wraps\/\">Meatless Monday<\/a> dinner or as a brunch dish.\u00a0 It will look like you spent all day on them, but they take under and hour to make.\u00a0 Enjoy!<\/p>\n<p><strong>Serv<\/strong><strong>ing<\/strong><strong>: <\/strong>8 pies<\/p>\n<p><strong>Prep time: <\/strong>5 minutes<\/p>\n<p><strong>Cook time: <\/strong>15 minutes<\/p>\n<p><strong>Bake time: <\/strong>25 minutes<\/p>\n<p><strong>Total time: <\/strong>45 minutes<\/p>\n<h3 id=\"ingredients\"><strong>Ingredients <\/strong><\/h3>\n<p>2 sheets thawed puff pastry<\/p>\n<p>4 tsp. (20 mL) vegetable oil<\/p>\n<p>1 \u00bd cups (375 mL) diced mushrooms<\/p>\n<p>6 slices <a href=\"http:\/\/yvesveggie.com\/en\/products\/breakfast\/\" target=\"_blank\" rel=\"noopener\">Yves Veggie Bacon Strips<\/a>, chopped<\/p>\n<p>1 clove of garlic, minced<\/p>\n<p>1 cup (250 mL) chopped rapini, stems removed<\/p>\n<p>1 cup (250 mL) chopped baby spinach<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>1 cup (250 mL) finely grated cheddar cheese<\/p>\n<p>5 eggs<\/p>\n<p>\u00bc cup (60 mL) milk<\/p>\n<h3 id=\"directions\"><strong>Directions <\/strong><\/h3>\n<ul>\n<li>Preheat oven to 400\u00b0F. Line a baking tray with parchment paper and set aside.<\/li>\n<li>In a small bowl whisk one egg and 1 tsp. of water creating your egg wash; set aside.<\/li>\n<li>In a large pan over medium high heat, add 1 tbsp. vegetable oil, mushrooms, bacon and garlic, cook for 8 minutes. Stir in rapini and spinach cook for another 3 minutes. Remove from heat and transfer mixture to a large mixing bowl. Stir in \u00be cup of cheese, salt and pepper.<\/li>\n<li>In a medium size bowl whisk 4 eggs with milk.<\/li>\n<li>In a small saut\u00e9 pan add 1 tsp. of vegetable oil over medium heat; add egg mixture. Using a spatula gently fold eggs until you have a soft scramble, about 5 minutes. Gently fold eggs into mushroom and bacon mixture.<\/li>\n<li>Unroll pastry sheets and cut each pastry sheet into four squares. Spoon \u00bc cup of the mushroom mixture into the center of each pastry square. Gently fold each pastry corner towards the center pinching ends of the pastry together, creating a square parcel.<\/li>\n<li>Transfer each parcel to prepared baking tray. Use a pastry brush to spread egg wash over pastry. Sprinkle the tops of pastry with reserved \u00bc cup of cheese.<\/li>\n<li>Bake for 25-30 minutes until pastry if puffed and golden brown. Serve warm or on the go for a quick easy breakfast.<\/li>\n<\/ul>\n<h3 id=\"tip\"><strong>Tip<\/strong><\/h3>\n<p>For a vegan alternative, replace cheese with vegan cheese and milk with a non-dairy milk of your choice. As an egg wash substitute, use any oil or plant-based milk.
