{"id":1578857,"date":"2020-02-10T23:10:15","date_gmt":"2020-02-11T04:10:15","guid":{"rendered":"https:\/\/divine.ca\/?p=1578857"},"modified":"2020-04-09T14:30:25","modified_gmt":"2020-04-09T18:30:25","slug":"greek-stuffed-zucchini","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/greek-stuffed-zucchini\/","title":{"rendered":"Greek Stuffed Zucchini"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">We love this easy to prepare recipe.\u00a0 It is a great healthy meal or you can make it as appetizers for your next dinner party.\u00a0 Greek stuffed zucchini is comfort food at it&#8217;s healthiest.\u00a0 The ingredients are simple and easy to find at the grocery store, but they have the &#8220;wow&#8221; factor when you mix them all together.\u00a0 Make this dish when you are craving <a href=\"https:\/\/divine.ca\/en\/divine-finds-halvana-tahini-with-a-twist\/\">Mediterranean flavours<\/a> at home.\u00a0 No one needs to know how easy the stuffed zucchini is to make.<\/p>\n<h3 id=\"ingredients\">Ingredients<\/h3>\n<p>\u2022 1 package of <a href=\"https:\/\/famillefontaine.ca\/en\/grain-fed-veal\/\" target=\"_blank\" rel=\"noopener\">Fontaine Family ground veal<\/a> (454 g)<\/p>\n<p>\u2022 4 green zucchini, halved lengthwise<\/p>\n<p>\u2022 1 Tbsp. oil<\/p>\n<p>\u2022 1\/2 cup red pepper, diced<\/p>\n<p>\u2022 2 cloves of garlic, minced<\/p>\n<p>\u2022 juice of 1\/2 lemon<\/p>\n<p>\u2022 1 Tbsp. oregano, chopped<\/p>\n<p>\u2022 1 tsp. thyme, chopped<\/p>\n<p>\u2022 1\/2 tsp. ground cinnamon<\/p>\n<p>\u2022 1\/2 cup crumbled feta cheese<\/p>\n<p>\u2022 3 Tbsp. Kalamata olives, chopped<\/p>\n<p>\u2022 ground pepper (to taste)<\/p>\n<p>\u2022 1 cup cherry tomatoes, cut in 4<\/p>\n<p>\u2022 2 Tbsp. olive oil<\/p>\n<h3 id=\"preparation\">Preparation<\/h3>\n<ol>\n<li>Preheat oven to 350 0F (180 0C)<\/li>\n<li>In a skillet over high heat, add 1 tbsp of oil and soften the onion with the diced pepper for 2 minutes. Add the garlic and continue cooking for 1 minute. Add the ground veal and break it up into small pieces with a wooden spoon. Continue cooking for 5 minutes. Add the lemon juice, oregano, thyme, cinnamon and mix well. Add the feta cheese and olives, season with pepper and set aside.<\/li>\n<li>Cut zucchini lengthwise and with a small spoon, scoop out the flesh of the zucchini. Line a baking sheet with parchment paper and place zucchini on it. Fill zucchini with the veal mixture.
