{"id":1578843,"date":"2020-02-10T16:45:23","date_gmt":"2020-02-10T21:45:23","guid":{"rendered":"https:\/\/divine.ca\/?p=1578843"},"modified":"2020-04-09T14:30:26","modified_gmt":"2020-04-09T18:30:26","slug":"meatless-mondays-breakfast-burger","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/meatless-mondays-breakfast-burger\/","title":{"rendered":"Meatless Mondays: Breakfast Burger"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">If you are on the hunt for a weekend breakfast or breakfast for <a href=\"https:\/\/divine.ca\/en\/meatless-mondays-artichoke-pesto-and-chorizo-cauliflower-pizza\/\">dinner<\/a>, this is the recipe for you.\u00a0 The breakfast burger is packed with protein and healthy fat.\u00a0 It is easy to make, but takes some preparation.\u00a0 If you want to enjoy this on a work day, simply prep all of the ingredients the night before and you can quickly cook yourself a hearty breakfast sandwich.\u00a0 You can make the recipe low carb by using lettuce wraps.<\/p>\n<p><strong>Serv<\/strong><strong>ing<\/strong><strong>: <\/strong>4 burgers<\/p>\n<p><strong>Prep time: <\/strong>15 mins<\/p>\n<p><strong>Cooking time: <\/strong>15 mins<\/p>\n<p><strong>Total time: <\/strong>30 minutes<\/p>\n<h3 id=\"ingredients\"><strong>Ingredients <\/strong><\/h3>\n<p>1 pkg. Yves Breakfast Patties<\/p>\n<p>1 tbsp (15 mL) olive oil<\/p>\n<p>1 cup (250 mL) sliced onion<\/p>\n<p>2 cups (500 mL) sliced mushrooms<\/p>\n<p>1.5 tbsp. (22.5 mL) white miso paste<\/p>\n<p>1 tbsp. (15 mL) water<\/p>\n<p>\u00be cup ripe avocado<\/p>\n<p>\u00bd tsp. (2 mL) chipotle powder<\/p>\n<p>1 tbsp. (15 mL) fresh lemon juice<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>4 eggs, sunny side up<\/p>\n<p>4 thin whole wheat pita buns, toasted<\/p>\n<p>2 cups (500 mL) arugula, divided<\/p>\n<h3 id=\"directions\"><strong>Directions <\/strong><\/h3>\n<p>Cook <a href=\"http:\/\/yvesveggie.com\/en\/products\/breakfast\/\" target=\"_blank\" rel=\"noopener\">Yves Breakfast Patties<\/a> as per package instructions.<\/p>\n<p>In a small food processor blend avocado and chipotle powder with lemon juice until smooth. Season with salt and pepper to taste.<\/p>\n<p>In a large non-stick frying pan over medium heat, add 1 tbsp. of olive oil, sliced onions and mushrooms, cook for 7-10 minutes until onions are tender. Add miso paste and water and stir to coat vegetables, cook for another 5 minutes.<\/p>\n<p>Assemble breakfast burgers: Place two patties onto each toasted bun, \u00bc of mushroom mixture, arugula and top with sunny side up egg. Spread desired amount of avocado cream onto the underside of the top bun and place on top of the egg.
