(5 mL) vegetable oil<\/p>\n<p>4 slices of mini naan bread, toasted<\/p>\n<p>4 eggs, soft poached<\/p>\n<p>1 cup (250 mL) baby spinach, washed<\/p>\n<p>Paprika for garnish<\/p>\n<h3 id=\"herb-yogurt\"><strong>Herb Yogurt <\/strong><\/h3>\n<p>\u00bd cup (125 mL) dairy free yogurt<\/p>\n<p>\u00bc cup (60 mL) finely chopped mint<\/p>\n<p>\u00bc cup (60 mL) finely chopped parsley<\/p>\n<p>1 tbsp. (15 mL) lemon juice<\/p>\n<h3 id=\"dukkah-spice\"><strong>Dukkah Spice<\/strong><\/h3>\n<p>1\/3 cup (80 mL) hazelnuts<\/p>\n<p>\u00bc cup (60 mL) raw cashews<\/p>\n<p>1 tbsp. (15 mL) coriander seeds<\/p>\n<p>1 tbsp. (15 mL) cumin seeds<\/p>\n<p>2 tsp. (10 mL) fennel seeds<\/p>\n<p>2 tsp. (10 mL) black sesame seeds<\/p>\n<p>1 tbsp. (15 mL) white sesame seeds<\/p>\n<h3 id=\"directions\"><strong>Directions <\/strong><\/h3>\n<ul>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>In a small bowl stir together hazelnuts, cashews, coriander seeds, cumin seeds, fennel seeds, black and white sesame seeds. Transfer spice and nut mix to an unlined baking tray. Roast for 10 minutes or until spices and nuts are a light golden brown. Cool completely.<\/li>\n<li>Using a small food processor, pulse spice and nut mixture until nuts are a small crumb; set aside.<\/li>\n<li>In a small saut\u00e9 pan on medium high heat, warm vegetable oil and cook bacon until crispy, about 4 minutes.<\/li>\n<\/ul>\n<p><strong>To serve:<\/strong> Spread desired amount of herb yogurt onto one toasted naan bread. Top with 1 slice of cooked bacon, a few spinach leaves and one poached egg.
