{"id":1577869,"date":"2019-12-06T17:28:51","date_gmt":"2019-12-06T22:28:51","guid":{"rendered":"https:\/\/divine.ca\/?p=1577869"},"modified":"2020-04-09T14:33:44","modified_gmt":"2020-04-09T18:33:44","slug":"roasted-turkey-with-gingerbread-glaze-and-gravy","status":"publish","type":"post","link":"https:\/\/divine.ca\/en\/roasted-turkey-with-gingerbread-glaze-and-gravy\/","title":{"rendered":"Roasted Turkey With Gingerbread Glaze and Gravy"},"content":{"rendered":"<p class=\"pk-dropcap pk-dropcap-borders\">The holidays just don&#8217;t feel as festive without a delicious turkey on the table.\u00a0 This recipe is the perfect blend of ginger and spice and everything nice.\u00a0 A 5lb turkey is perfect for feeding 10-12 people.\u00a0 We recommend vegetables like winter squash, sweet potatoes or parsnips as <a href=\"https:\/\/divine.ca\/en\/whole-roasted-tex-mex-cauliflower\/\">side dishes<\/a>.\u00a0 Add similar spices to keep the flavour profile consistent.\u00a0 The only problem?\u00a0 It will be such a hit, that you won&#8217;t have leftovers.<\/p>\n<p>Serves: 10 to 12<\/p>\n<p>Prep time: 30 min<\/p>\n<p>Cooking Time: 2.5 hrs<\/p>\n<h3 id=\"ingredients\"><strong>Ingredients:<\/strong><\/h3>\n<p><strong><u>Turkey<\/u><\/strong><\/p>\n<p>2 cooking onions, skin on, sliced into rounds<\/p>\n<p>1 orange, sliced into \u00bd\u201d rounds<\/p>\n<p>\u00bd bulb of fennel, sliced into \u00bc\u201d slices<\/p>\n<p>5kg whole turkey<\/p>\n<p>1 tbsp canola oil<\/p>\n<p>1 tsp salt<\/p>\n<p><strong><u>Glaze<\/u><\/strong><\/p>\n<p>2 tbsp canola oil<\/p>\n<p>1 shallot, minced<\/p>\n<p>2 cloves garlic, minced<\/p>\n<p>4 tbsp chopped ginger<\/p>\n<p>\u00bc tsp ground cinnamon<\/p>\n<p>\u00bc tsp ground allspice<\/p>\n<p>\u00bc tsp ground ginger<\/p>\n<p>\u00bc tsp salt<\/p>\n<p>2\/3 cup fresh orange juice<\/p>\n<p>\u00bc cup molasses<\/p>\n<p>2 Tbsp ketchup<\/p>\n<p>2 tbsp maple syrup<\/p>\n<p><strong><u>Gravy<\/u><\/strong><\/p>\n<p>All the drippings from the turkey pan<\/p>\n<p>Remaining glaze<\/p>\n<p>\u00bd cup apple cider<\/p>\n<p>\u00bd cup water<\/p>\n<p>1\/8<sup>th<\/sup> tsp ground allspice<\/p>\n<p>1\/8<sup>th<\/sup> tsp ground ginger<\/p>\n<p>1\/8<sup>th<\/sup> tsp ground cinnamon<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>2 tbsp cornstarch<\/p>\n<p>4 tbsp water<\/p>\n<p><strong><u>Stuffing<\/u><\/strong><\/p>\n<p>2 Tbsp. olive oil<\/p>\n<p>1-1\/2 Cups diced onion<\/p>\n<p>1 cup diced fennel<\/p>\n<p>\u00be Cup diced celery<\/p>\n<p>1 large Cortland apple, medium dice<\/p>\n<p>3 Cups soft brioche breadcrumbs<\/p>\n<p>3 Cups soft cinnamon raisin bread, cut into 1\u201d cubes<\/p>\n<p>\u00bc cup melted, unsalted butter<\/p>\n<p>1 Cup turkey or chicken stock<\/p>\n<p>1-1\/2 tsp. salt<\/p>\n<p>1 tsp. coarse black pepper<\/p>\n<p>\u00bd Cup chopped flat leaf parsley<\/p>\n<p>You will also need:<\/p>\n<p>An instant read thermometer<\/p>\n<h3 id=\"directions\"><strong>Directions:<\/strong><\/h3>\n<p>Preheat oven to 350F<\/p>\n<p><strong>Step one:<\/strong> Make the stuffing<\/p>\n<ol>\n<li>In a large fry pan on medium high heat, add oil, diced onion, diced fennel, celery, apple and saut\u00e9 until tender (5-8 minutes).<\/li>\n<li>Scrape vegetables into large mixing bowl.\u00a0 Add brioche crumbs, raisin bread cubes, melted butter, turkey or chicken stock, salt, pepper and parsley.<\/li>\n<li>Using a large spoon, combine ingredients until well blended.<\/li>\n<li>Stuff the cavity of your holiday turkey with \u00be of this delicious dressing, reserving the other \u00bc for the upper end of the bird.<\/li>\n<\/ol>\n<p>*For additional holiday cheer, add \u00bd cup fresh cranberries before stuffing turkey.<\/p>\n<p><strong>Step two:<\/strong> Cook the turkey<\/p>\n<ol>\n<li>Lay the onion slices, orange slices and fennel on a large rimmed baking sheet.<\/li>\n<li>Lay the turkey on top of the vegetables, breast side up and tuck the wing tips under the turkey. Rub canola oil all over the turkey and season evenly with salt.<\/li>\n<li>Cook on the middle rack in the oven for 1hr 15min.<\/li>\n<li>Meanwhile, get started on the glaze. Add the canola along with the shallot, ginger and garlic to a pot that\u2019s set over medium heat.\u00a0 Cook for 3min until everything is soft and translucent.\u00a0 Add the remaining ingredients for the glaze and bring to a simmer.\u00a0 Simmer on low for 8min. Pour the glaze through a sieve, pushing the liquid through with the back of a spoon. Discard the solids.<\/li>\n<li>Insert a thermometer into the thickest part of the thigh (do not hit the bone). When the temperature reads 140F, begin basting the turkey with the glaze every 10min.<\/li>\n<li>Once the thermometer reads 165F remove the turkey from the oven. Cover the turkey and let it rest for 20min.<\/li>\n<li>Prepare the gravy by pouring all the drippings from the turkey pan into a medium pot. Add the remainder of the glaze along with the apple cider, water, allspice, ginger and cinnamon. Bring to a simmer and cook for 4min.<\/li>\n<li>Whisk the cornstarch with the water until it is fully dissolved.
