This vegetarian burger blends black rice, mushrooms and eggplant to replicate a meaty texture which, when combined with the other ingredients, creates an incredible depth of flavour. This is a must-make recipe!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1577243\" src=\"https:\/\/divine.ca\/wp-content\/uploads\/2019\/10\/Burger-au-riz-noir-et-halloumi-1-800x606.jpg\" alt=\"\" width=\"800\" height=\"606\" srcset=\"https:\/\/divine.ca\/wp-content\/uploads\/2019\/10\/Burger-au-riz-noir-et-halloumi-1-800x606.jpg 800w, https:\/\/divine.ca\/wp-content\/uploads\/2019\/10\/Burger-au-riz-noir-et-halloumi-1-1160x879.jpg 1160w, https:\/\/divine.ca\/wp-content\/uploads\/2019\/10\/Burger-au-riz-noir-et-halloumi-1-320x242.jpg 320w, https:\/\/divine.ca\/wp-content\/uploads\/2019\/10\/Burger-au-riz-noir-et-halloumi-1-560x424.jpg 560w, https:\/\/divine.ca\/wp-content\/uploads\/2019\/10\/Burger-au-riz-noir-et-halloumi-1-1920x1455.jpg 1920w, https:\/\/divine.ca\/wp-content\/uploads\/2019\/10\/Burger-au-riz-noir-et-halloumi-1.jpg 2200w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>1 cup (250 mL) U.S.-grown black Japonica rice<\/p>\n<p>30g dried mushrooms<\/p>\n<p>1 tsp (5 mL) each salt, garlic powder and onion powder<\/p>\n<p>2 medium Chinese eggplants<\/p>\n<p>1 tsp (5 mL) smoked paprika<\/p>\n<p>\u00bd tsp (2 mL) chili flakes<\/p>\n<p>200 g cubed halloumi cheese<\/p>\n<p>1 tbsp (15 mL) soy sauce<\/p>\n<p>3 tbsp (45 mL) sweet (glutinous) rice flour<\/p>\n<p>4 tsp (20 mL) olive oil, divided<\/p>\n<p>6 brioche buns<\/p>\n<h4 id=\"balsamic-onion\"><strong>Balsamic Onion:<\/strong><\/h4>\n<p>1 large red onion, sliced<\/p>\n<p>3 tbsp (45 mL) balsamic glaze<\/p>\n<h4 id=\"to-serve-optional\"><strong>To serve (optional):<\/strong><\/h4>\n<p>4 tbsp (60 mL) garlic mayo<\/p>\n<p>1 avocado<\/p>\n<p>alfalfa sprouts<\/p>\n<h4 id=\"directions\"><strong>Directions<\/strong><\/h4>\n<ol>\n<li>In a small saucepan, combine rinsed rice, 2 cups water, dried mushrooms, salt, garlic powder and onion powder. Bring to a boil; cover and reduce to simmer for 30-40 minutes until rice is tender.<\/li>\n<li>Meanwhile, chop eggplant into large chunks and pulse in a food processor to the size of peas. Dry saut\u00e9 eggplant with paprika and chili flakes over medium-high heat in a large non-stick pan until tender; about 5 minutes. Transfer to a large bowl.<\/li>\n<li>Place hot rice\/mushroom mixture into a food processor and pulse 5-7 times. Remove half of mixture into eggplant bowl. Add cubed halloumi to remaining half of rice\/mushroom mixture and pulse about 4 times or until cheese is pea sized. Scrape into eggplant bowl; stir in soy sauce and rice flour until well combined. Form into 6 equal sized patties. In a non-stick skillet over medium-high heat, cook patties in 2 batches with 2 tsp olive oil until golden brown.
